Duck is normally associated with oriental crispy cuisine but is now available in supermarkets across the world. It flesh is rich and full of flavour. Whilst duck meat is extremely nutritious, with high levels of protein, B vitamins and minerals such as zinc, potassium, magnesium and iron.

There are so many recipes that use this flesh from the usual to salads, ragout, pasta, fried, curries and even more. The flesh is versatile enough to cope with high heat. Also it is strong enough to handle spices and marinades. Furthermore, it is becoming as easy to buy as chicken and turkey.

Duck breasts are as lean as lean as chicken or turkey. They also contain more iron per serving than most other poultry, and even some cuts of beef.
