Cheesy Nachos
Ingredients
For the Chilli:
- 500 g beef mince
- 1 medium onion finely diced
- 1 large red pepper chopped (optional)
- 2 cloves garlic chopped or crushed
- 400 g baked beans
- 1 tbsp tomato purée
- 400 g chopped tomatoes
- 1 tsp chilli powder adjust to taste
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp black pepper
- salt to taste
- 1 tbsp olive oil for frying
For the Nachos:
- 300 g Doritos any flavour you like
- 200 g mature cheddar cheese grated
Optional Toppings:
Instructions
- Heat the oil in a large frying pan over medium heat. Add the diced onion (and red pepper if using) and cook for 3–4 minutes until softened.1 medium onion, 1 large red pepper, 1 tbsp olive oil
- Stir in the garlic and cook for another minute.2 cloves garlic
- Add the beef mince to the pan and cook until browned, breaking it up as it cooks.500 g beef mince

- Pour in the chopped tomatoes and stir.400 g chopped tomatoes
- Simmer gently for 10 minutes to thicken slightly.
- Stir in the baked beans, including their sauce, and let the chilli cook for a further 10–15 minutes until rich and well combined.400 g baked beans
- Taste and adjust seasoning if needed.
- Preheat the grill (or oven at 180°C/350°F).
- Spread the Doritos evenly over a large ovenproof dish or baking tray. Spoon the hot chilli generously into the middle of the dish, making sure to cover most of the chips.300 g Doritos
- Scatter the grated cheddar evenly across the chilli and chips.200 g mature cheddar cheese
- Place under the grill (or in the oven) for about 5 minutes, or until the cheese is fully melted and bubbling.
