There is something wonderfully satisfying about a tray of sticky, golden chicken legs coming to the table. Honey Chicken Legs are exactly the sort of dish I enjoy making when I want familiar ingredients with a little something extra. The honey brings sweetness, while the savoury flavours in the marinade give the chicken plenty of character.
I have always enjoyed experimenting with chicken because it is such a versatile ingredient. Chicken legs are particularly good for this kind of cooking because they have plenty of flavour and remain wonderfully moist. They also stand up well to strong marinades, which makes them ideal when you want to try different combinations of sweet, savoury and spicy flavours.
The first thing I noticed about this dish was the aroma. As the chicken cooks, the honey-based marinade begins to caramelise and creates a delicious smell. Consequently, it becomes rather difficult to resist checking on the chicken before it is ready. The edges gradually turn darker and stickier, while the skin develops a lovely glossy appearance.
For me, that sticky coating is one of the best parts of Honey Chicken Legs. I like the contrast between the slightly crisp outside and the tender meat underneath. Furthermore, the honey adds a gentle sweetness without making the chicken taste like a dessert. Instead, it works alongside the savoury flavours and gives the whole dish a surprisingly balanced taste.
I also like having several ways to cook these chicken legs. On a warm day, the barbecue is my first choice because the heat adds a wonderful smoky quality. The marinade catches against the hot cooking surface and develops those darker, caramelised edges that make barbecued chicken so tempting.
However, the oven works beautifully when the weather is not cooperating. It gives the chicken plenty of time to cook through while the marinade thickens around the outside. An air fryer is another excellent option, especially when I want a smaller batch without heating the whole kitchen.
Of course, the marinade is where there is plenty of room for experimentation. I enjoy changing the balance of flavours depending on what I have available. A little chilli can add warmth, while garlic gives the chicken a deeper savoury note. Likewise, ginger can bring a gentle freshness that works particularly well with honey.
I would not be afraid to experiment with the texture either. A longer marinade gives the flavours more opportunity to work their way into the chicken. Meanwhile, frequent basting during cooking helps build up that wonderfully sticky coating. It is this combination of juicy meat and caramelised exterior that makes the dish so appealing.
Honey Chicken Legs are also wonderfully adaptable when it comes to serving. I like them with a simple salad and some crispy potatoes, particularly during the summer. Alternatively, steamed rice and stir-fried vegetables turn them into a more substantial meal. A bowl of crunchy slaw also works particularly well because its freshness cuts through the richness of the chicken.
Another reason I enjoy this dish is that it feels impressive without requiring complicated cooking. The ingredients may be simple, but the finished chicken looks colourful and inviting. Once the marinade has caramelised, each chicken leg has a glossy finish that makes it look as though far more effort went into the meal.
Most importantly, this is a dish that encourages experimentation. I can adjust the flavours, change the cooking method or add different side dishes depending on my mood. That is exactly the sort of cooking I enjoy most at home.
Honey Chicken Legs prove that a simple chicken dinner does not have to be predictable. With juicy meat, a sticky honey glaze and plenty of opportunities to play with different flavours, this is a dish I would happily make again and again. Whether cooked over glowing barbecue coals, roasted in the oven or crisped in the air fryer, these chicken legs are guaranteed to bring plenty of flavour to the table.

- 2 tbsp vegetable oil or sunflower
- salt
- freshly ground black pepper
Honey Marinade Ingredients:
- 5 tbsp runny honey
- 3 tbsp light soy sauce
- 2 tbsp tomato ketchup
- 2 cloves garlic finely minced
- 1 tbsp fresh ginger finely grated
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- ½ tsp chilli powder or to taste
- ½ tsp Chinese five-spice
- 1 tbsp Worcestershire sauce
Instructions
- Place the honey, soy sauce, tomato ketchup, garlic, ginger, lemon juice, smoked paprika, chilli powder, Chinese five-spice and Worcestershire sauce into a bowl.5 tbsp runny honey, 3 tbsp light soy sauce, 2 tbsp tomato ketchup, 2 cloves garlic, 1 tbsp fresh ginger, 1 tbsp lemon juice, 1 tsp smoked paprika, ½ tsp chilli powder, ½ tsp Chinese five-spice, 1 tbsp Worcestershire sauce
- Mix thoroughly until all the ingredients are well combined.
- Taste a little of the marinade before adding the chicken. Adjust the chilli if you prefer more heat, or add a little extra honey if you want a sweeter finish.
- Pat the chicken legs dry with kitchen paper. Season them lightly with salt and freshly ground black pepper. Place them into a large bowl or suitable food-safe container.8 large chicken legs, salt, freshly ground black pepper
- Pour the marinade over the chicken and turn the legs several times until they are thoroughly coated.
- Cover and refrigerate for at least 1 hour. For even more flavour, leave them for 3–4 hours.
- Remove the chicken from the refrigerator about 20 minutes before cooking.
Barbecue Method:
- Preheat the barbecue and arrange the coals so you have a medium heat rather than an extremely hot cooking area.
- Remove the chicken legs from the marinade, allowing the excess to drip back into the bowl.
- Place the chicken onto the barbecue and cook for approximately 25–30 minutes, turning regularly.
- Brush with additional marinade during the first part of cooking, but avoid brushing raw marinade onto chicken that is already cooked.
- Keep turning the legs so the honey does not burn. The chicken should develop a deep golden-brown colour with darker, caramelised edges.
- Check that the thickest part of the chicken has reached 75°C and that the juices run clear.
Oven Method:
- Preheat the oven to 200°C, 180°C fan, Gas Mark 6.
- Place the chicken legs onto a lightly oiled wire rack set over a baking tray. This allows the heat to circulate around the chicken and helps the outside become sticky and slightly crisp.2 tbsp vegetable oil
- Cook for approximately 40–45 minutes, turning the chicken halfway through.
- Brush with the marinade several times during cooking to build up the sticky coating.
- The honey will gradually caramelise, so keep an eye on the chicken towards the end of cooking.
- Check that the thickest part has reached 75°C before serving.
Air Fryer Method:
- Preheat the air fryer to 190°C if your model requires preheating.
- Place the chicken legs into the basket in a single layer. Avoid overcrowding because the hot air needs to circulate around the chicken.
- Cook for approximately 25–30 minutes, turning the legs halfway through.
- Brush with some of the marinade during cooking to create a thicker, stickier coating.
- Check the internal temperature has reached 75°C before removing the chicken.
- Transfer the cooked chicken legs to a serving plate and leave them to rest for approximately 5 minutes.
- This allows the juices to settle while the sticky coating remains beautifully glossy.
- Serve immediately with your choice of side dishes.
