There is something wonderfully satisfying about a tray of sticky, golden chicken legs coming to the table. Honey Chicken Legs are exactly the sort of dish I enjoy making when I want familiar ingredients with a little something extra. The honey brings sweetness, while the savoury flavours in the marinade give the chicken plenty of character.

I have always enjoyed experimenting with chicken because it is such a versatile ingredient. Chicken legs are particularly good for this kind of cooking because they have plenty of flavour and remain wonderfully moist. I would not be afraid to experiment with the texture either. A longer marinade gives the flavours more opportunity to work their way into the chicken. Meanwhile, frequent basting during cooking helps build up that wonderfully sticky coating. It is this combination of juicy meat and caramelised exterior that makes the dish so appealing.

Honey Chicken Legs are also wonderfully adaptable when it comes to serving. I like them with a simple salad and some crispy potatoes, particularly during the summer. Alternatively, steamed rice and stir-fried vegetables turn them into a more substantial meal. A bowl of crunchy slaw also works particularly well because its freshness cuts through the richness of the chicken.

Another reason I enjoy this dish is that it feels impressive without requiring complicated cooking. The ingredients may be simple, but the finished chicken looks colourful and inviting. Once the marinade has caramelised, each chicken leg has a glossy finish that makes it look as though far more effort went into the meal.

Most importantly, this is a dish that encourages experimentation. I can adjust the flavours, change the cooking method or add different side dishes depending on my mood. That is exactly the sort of cooking I enjoy most at home.

Instructions

  • Place the honey, soy sauce, tomato ketchup, garlic, ginger, lemon juice, smoked paprika, chilli powder, Chinese five-spice and Worcestershire sauce into a bowl.
    5 tbsp runny honey, 3 tbsp light soy sauce, 2 tbsp tomato ketchup, 2 cloves garlic, 1 tbsp fresh ginger, 1 tbsp lemon juice, 1 tsp smoked paprika, ½ tsp chilli powder, ½ tsp Chinese five-spice, 1 tbsp Worcestershire sauce
  • Mix thoroughly until all the ingredients are well combined.
  • Taste a little of the marinade before adding the chicken. Adjust the chilli if you prefer more heat, or add a little extra honey if you want a sweeter finish.
  • Pat the chicken legs dry with kitchen paper. Season them lightly with salt and freshly ground black pepper. Place them into a large bowl or suitable food-safe container.

  • Pour the marinade over the chicken and turn the legs several times until they are thoroughly coated.
  • Cover and refrigerate for at least 1 hour. For even more flavour, leave them for 3–4 hours.
  • Remove the chicken from the refrigerator about 20 minutes before cooking.

Barbecue Method:

  • Preheat the barbecue and arrange the coals so you have a medium heat rather than an extremely hot cooking area.
  • Remove the chicken legs from the marinade, allowing the excess to drip back into the bowl.
  • Place the chicken onto the barbecue and cook for approximately 25–30 minutes, turning regularly.
  • Brush with additional marinade during the first part of cooking, but avoid brushing raw marinade onto chicken that is already cooked.
  • Keep turning the legs so the honey does not burn. The chicken should develop a deep golden-brown colour with darker, caramelised edges.
  • Check that the thickest part of the chicken has reached 75°C and that the juices run clear.

Oven Method:

  • Preheat the oven to 200°C, 180°C fan, Gas Mark 6.
  • Place the chicken legs onto a lightly oiled wire rack set over a baking tray. This allows the heat to circulate around the chicken and helps the outside become sticky and slightly crisp.

  • Cook for approximately 40–45 minutes, turning the chicken halfway through.
  • Brush with the marinade several times during cooking to build up the sticky coating.
  • The honey will gradually caramelise, so keep an eye on the chicken towards the end of cooking.
  • Check that the thickest part has reached 75°C before serving.

Air Fryer Method:

  • Preheat the air fryer to 190°C if your model requires preheating.
  • Place the chicken legs into the basket in a single layer. Avoid overcrowding because the hot air needs to circulate around the chicken.
  • Cook for approximately 25–30 minutes, turning the legs halfway through.
  • Brush with some of the marinade during cooking to create a thicker, stickier coating.
  • Check the internal temperature has reached 75°C before removing the chicken.
  • Transfer the cooked chicken legs to a serving plate and leave them to rest for approximately 5 minutes.
  • This allows the juices to settle while the sticky coating remains beautifully glossy.
  • Serve immediately with your choice of side dishes.

For a barbecue meal, I particularly like serving them with crunchy coleslaw, corn on the cob and crispy potato wedges. For an easy midweek dinner, steamed rice and stir-fried vegetables make an excellent combination.
Cook’s Tips:
Keep the heat under control: Honey contains natural sugars, so it can burn if the cooking temperature becomes too high. Turn the chicken regularly when barbecuing.
Marinate for longer: Although an hour will give good results, several hours will allow the flavours to develop more fully.
Don’t overcrowd the air fryer: Cook in batches if necessary. This helps the chicken brown properly rather than steam.
Use a thermometer: Chicken legs are best cooked until the thickest part reaches 75°C. Avoid touching the bone when taking the temperature.
For extra stickiness: Brush the chicken with a little fresh honey during the final few minutes of cooking, taking care not to let it burn.
For extra heat: Increase the chilli powder or add a little finely chopped fresh chilli to the marinade.
For more citrus flavour: Add a little finely grated lemon or lime zest to the marinade.
This recipe gives you a good balance of sweet, savoury, smoky and gently spicy flavours, while the different cooking methods make it easy to adapt to the occasion.
