When the family wants something tasty to go with dinner, a tray of homemade potato wedges is always worth considering. These chunky pieces of potato develop beautifully browned edges while staying soft and fluffy inside. They are easy to serve, simple to season and wonderfully suited to family cooking. Whether the children fancy something to dip into ketchup or the adults want a tasty side dish for a homemade burger, crispy potato wedges fit the bill perfectly.
Potato wedges make a brilliant alternative to ordinary chips. Their chunky shape gives them plenty of bite, while the larger pieces of potato help create that delicious contrast between the crispy skin and the tender middle. They also look inviting on the plate, especially when you season them with a few herbs or spices.
Why Crispy Potato Wedges Are So Popular
One of the best things about potato wedges is their versatility. They fit comfortably into everyday family cooking, yet they are equally welcome at a weekend barbecue or a relaxed evening with friends. Children often enjoy picking them up with their fingers and dipping them into their favourite sauces. Meanwhile, adults can add extra seasoning to create something a little more exciting.
Another advantage is that wedges work with all sorts of meals. Serve them with homemade burgers, grilled chicken, sausages or fish fingers for an easy dinner that the whole family can enjoy. Alternatively, place a generous bowl in the middle of the table and let everyone help themselves.
They are also ideal for sharing during a film night or a casual get-together. Add a few dipping sauces, such as tomato ketchup, mayonnaise or garlic mayonnaise, and you have a simple snack that rarely lasts very long!
Getting That Delicious Crispy Finish
The secret to enjoyable potato wedges lies in achieving the right texture. Nobody wants a plate of soggy potatoes when they are expecting a satisfying crunch. Fortunately, a few simple considerations can make a noticeable difference.
Choosing suitable potatoes is a good starting point. Floury varieties generally produce a softer, fluffier centre, which works particularly well when you want a contrast with the crisp outer surface. Cutting the potatoes into reasonably even wedges also helps them cook at a similar rate.
Furthermore, avoid crowding the baking tray when cooking them in the oven. The wedges need enough space for the hot air to circulate around each piece. If they sit too closely together, they may steam instead of developing that lovely golden finish.
A light coating of oil helps the outside brown, while the right seasoning adds plenty of flavour. Turning the wedges during cooking encourages an even colour on several sides. Once they emerge from the oven, serve them while they are hot for the best texture.
Flavours You Can Add to Your Potato Wedges
Plain, seasoned potato wedges taste delicious, but there are plenty of ways to change them to suit your family’s preferences. You can keep things mild for younger children or introduce stronger flavours for those who enjoy a little extra excitement.
Here are a few popular ideas:
- Garlic and herb: Garlic powder with dried parsley, oregano or thyme.
- Smoky paprika: Paprika adds a warm colour and a gentle smoky flavour.
- Cheesy wedges: Sprinkle with grated Parmesan towards the end of cooking.
- BBQ seasoning: A smoky, slightly sweet seasoning that works well with burgers and grilled meats.
- Spicy wedges: Add a little chilli powder or cayenne pepper for extra heat.
- Rosemary and black pepper: A lovely combination for a more traditional, savoury flavour.
- Cajun seasoning: A bolder option with a mixture of spices and a gentle kick.
You do not need to use several seasonings at once. In fact, choosing just one or two complementary flavours often produces the tastiest results.
An Easy Addition to Family Meals
Crispy potato wedges are a dependable choice when you want something simple, filling and enjoyable. They use an everyday ingredient, suit a wide range of meals and allow plenty of room for experimentation. Moreover, you can adjust the seasoning to suit different tastes without making separate dishes for everyone.
For busy parents, that flexibility is particularly useful. Serve them as a side dish during the week, prepare a sharing bowl at the weekend or let the children choose their favourite dip. However you present them, freshly cooked potato wedges bring a little extra enjoyment to the table.

Crispy Potato Wedges
Equipment
- Spatula or kitchen tongs
Ingredients
- 800 g floury potatoes such as Maris Piper or King Edward
- 3 tbsp olive oil or vegetable oil
- 1 tsp paprika optional
- 1 tsp garlic powder optional
- ½ tsp dried mixed herbs or oregano optional
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 220°C / 200°C fan / 425°F / Gas Mark 7. Wash the potatoes thoroughly and scrub away any dirt. You can leave the skins on for extra texture and flavour, or peel them if you prefer.
- Cut each potato in half lengthways, then cut each half into two or three wedges, depending on its size. Aim for reasonably even pieces so they cook at the same rate.800 g floury potatoes
- Place the wedges in a large mixing bowl. Add the oil, paprika, garlic powder, dried herbs, salt and black pepper. Toss everything together until the potatoes have an even coating.3 tbsp olive oil, 1 tsp paprika, 1 tsp garlic powder, ½ tsp dried mixed herbs, Salt, Black pepper
- Spread the wedges over a large baking tray in a single layer, leaving a little space between each piece. If necessary, use two trays rather than crowding them together. This helps the edges crisp instead of steam.
- Bake for 35–45 minutes, turning the wedges halfway through cooking. They should develop golden-brown edges and a tender centre. Larger wedges may need a little longer, so check that a knife passes easily through the thickest piece.
- Remove the wedges from the oven and taste one carefully once it has cooled slightly. Add a little extra salt if needed, then serve immediately while the outside remains crisp and the centres are fluffy.
