Macadamia Crusted Cod

Living on the coast means I am always looking for new ways to enjoy fresh seafood. There is something special about bringing home a lovely piece of fish and turning it into a meal that feels a little different from the usual seaside favourites. Macadamia Crusted Cod is a perfect example. It combines thick, tender cod fillets with a delicate batter and a generous topping of crushed macadamia nuts. The result is a wonderful contrast of textures and flavours that makes every mouthful a pleasure.

As someone who loves cooking seafood, I believe cod deserves far more attention than simply being served with chips. Although traditional fish and chips will always have a special place in my heart, experimenting with different coatings and toppings can transform this familiar fish into something quite exciting. Macadamia nuts offer a particularly lovely twist because their buttery flavour complements the naturally mild taste of cod without overpowering it.

Why Macadamia Crusted Cod Works So Well

The secret to this dish lies in the balance between its ingredients. Cod has firm, delicate flesh that separates into beautiful flakes when cooked properly. Furthermore, its gentle flavour makes it an excellent choice for pairing with ingredients that provide extra character. The macadamia nuts bring a subtle sweetness and rich, buttery taste, creating a delicious partnership with the fish.

I particularly enjoy using thick cod fillets for this dish. They remain wonderfully moist in the middle while the outside develops an inviting golden finish. Meanwhile, the delicate batter provides a light coating that helps the crushed macadamia nuts adhere to the fish. Rather than creating a heavy crust, this combination gives every portion an appealing mixture of softness and crunch.

Texture is an important part of good seafood cooking. The tender flakes of cod contrast beautifully with the crisp nut topping, making the dish interesting from the first bite to the last. In addition, macadamias have a naturally rich flavour, so there is no need to overwhelm the fish with lots of strong seasonings.

A Little Coastal Inspiration in the Kitchen

Growing up around coastal food traditions, or simply living close enough to enjoy the sights and smells of the sea, encourages an appreciation for good fish. Fresh cod is wonderfully versatile, and I enjoy finding ways to make it feel special without making the cooking unnecessarily complicated.

This dish fits that approach perfectly. It has the familiar comfort of a home-cooked fish supper, yet the macadamia topping introduces something unexpected. Whenever I experiment with seafood, I look for ingredients that enhance the natural flavour rather than disguise it. Fortunately, cod and macadamias work together beautifully.

Although macadamia nuts might not be the first ingredient that comes to mind when thinking about British coastal cooking, they introduce an interesting international influence. Their rich, creamy character is particularly appealing alongside the clean flavour of white fish. Consequently, this dish feels equally suitable for a relaxed family dinner or a meal prepared for friends.

What to Serve with Macadamia Crusted Cod

One of my favourite things about this cod dish is how easily it fits into different menus. For a comforting meal, golden roast potatoes or creamy mashed potatoes make excellent companions. Alternatively, lightly buttered new potatoes provide a fresher, simpler accompaniment that allows the fish to remain the star of the plate.

Vegetables are another welcome addition. Steamed green beans, asparagus or tender broccoli provide colour and freshness, while a crisp green salad offers a lighter contrast to the buttery macadamia topping. A squeeze of fresh lemon is also a lovely finishing touch because its bright acidity balances the richness of the nuts.

For an extra coastal touch, I would happily serve this dish with homemade tartar sauce on the side. However, I would keep the sauce relatively light so that it complements rather than competes with the delicate fish.

A Seafood Dish Worth Trying

Macadamia Crusted Cod reminds me why I enjoy cooking seafood so much. With a good piece of fish and a little imagination, everyday ingredients can become something memorable. The tender cod, delicate batter and crunchy macadamia topping each contribute something different, yet they come together in a wonderfully balanced dish.

Whether you regularly cook fish at home or are looking for a fresh idea to add to your seafood collection, this dish is well worth considering. It brings a touch of elegance to the dinner table without losing the welcoming character of home cooking. Best of all, it celebrates everything I love about preparing seafood: simple ingredients, complementary flavours and the pleasure of sharing a delicious meal with family and friends.

Ingredients

Optional serving suggestions:

Instructions

  • Pat the cod fillets dry with kitchen paper. Removing excess moisture helps the coating stick and encourages the fish to develop a lovely golden finish.
    2 thick cod fillets
  • Season both fillets lightly with salt and black pepper. Set them aside while preparing the macadamia coating.
    Salt, Black pepper
  • Place the macadamia nuts in a food processor and pulse until finely crushed. Alternatively, put them in a sealed food bag and gently crush them with a rolling pin.
    50 g macadamia nuts
  • Aim for a mixture of small pieces rather than a fine powder. This gives the finished crust a pleasant crunch without making it too heavy.
  • Mix the crushed macadamias with the breadcrumbs, paprika and garlic powder in a shallow bowl.
2 tbsp breadcrumbs, ½ tsp paprika, ¼ tsp garlic powder
  • Place the plain flour in the first shallow bowl.
    50 g plain flour
  • Crack the egg into the second bowl, add the milk and beat with a fork until combined.
1 medium egg, 2 tbsp milk
  • Keep the macadamia and breadcrumb mixture in the third bowl.
  • Dip each cod fillet into the flour, coating both sides. Shake away any excess flour before dipping the fish into the egg mixture.
  • Finally, press the fillets gently into the macadamia mixture. Make sure the top and sides have a generous coating, pressing lightly so the nuts adhere.
  • Preheat the oven to 190°C conventional or 170°C fan.
  • Heat the olive oil and butter in a large frying pan over a medium heat. Once the butter has melted and begins to foam, carefully add the coated cod fillets.
    1 tbsp olive oil, 15 g butter
  • Cook for approximately 2 minutes on each side, depending on their thickness. Handle them gently to avoid disturbing the crust.
  • The aim is to develop a light golden colour rather than cook the fish completely in the pan. Macadamia nuts contain natural oils, so keep the heat moderate to prevent them from burning.
  • Transfer the cod fillets to a baking tray lined with baking parchment, placing the macadamia-coated side facing upwards.
  • Bake for approximately 8–12 minutes, depending on the thickness of the fillets. The fish should become opaque and separate easily into flakes when tested with a fork.
  • For food safety, the centre should reach 63°C if checked with a food thermometer. Thicker fillets may need a little longer, so use the temperature and texture to judge when they are ready.
  • Remove the cod from the oven and leave it to rest for 2 minutes. This allows the juices to settle while the nut crust retains its crisp texture.
  • Serve immediately with lemon wedges and your chosen accompaniments. A little freshly chopped parsley adds colour and a fresh finish.
    1 medium lemon, 200 g baby potatoes, 150 g green beans, 100 g asparagus, Fresh parsley

Notes

Serving:
Classic coastal supper: Serve with chunky chips, peas and homemade tartar sauce.
Fresh and colourful: Pair with steamed asparagus, green beans and buttery new potatoes.
Light lunch: Serve with a crisp green salad, cherry tomatoes and a lemon dressing.
Special dinner: Add creamy mashed potatoes and lightly roasted seasonal vegetables.
Tips for the Best Macadamia Crusted Cod:
Choose thick fillets: They are less likely to dry out while the crust becomes golden.
Crush the nuts carefully: Small pieces create a better coating than large chunks, which can fall off during cooking.
Keep the heat moderate: Macadamias can brown quickly because of their natural fat content.
Avoid overcooking: Cod is at its best when moist, tender and just cooked through.
Keep the topping crunchy: Serve immediately rather than covering the cooked fish, as trapped steam can soften the crust.
Storage/Reheating:
This dish is best enjoyed freshly cooked. If you have leftovers, refrigerate them in a covered container within two hours and eat within 1–2 days.
Reheat in an oven at 180°C conventional or 160°C fan until piping hot throughout. The oven helps restore some of the crispness, although the coating may not be quite as crunchy as when freshly prepared. Avoid repeated reheating.

We enjoyed this recipe, although I found the nuts browned quite quickly in the frying pan. Keeping the heat lower made a difference.

A tasty and straightforward recipe. I would probably use slightly fewer breadcrumbs next time to let the macadamia flavour stand out even more.

The flavour was good, but my coating came away from the fish in a couple of places. I will make sure to dry the cod thoroughly before coating it next time.
