Tomato Bruschetta Instructions:

  • Preheat the oven to 200°C (400°F). Place the sliced baguette on a baking tray and toast for 5 minutes or until golden brown.
    1 medium French baguette
  • In a bowl, mix the diced tomatoes, olive oil, minced garlic and chopped basil. Season with salt and pepper.
    2 large ripe tomatoes, 2 tbsp extra virgin olive oil, 1 clove garlic, 4 leaves basil, salt, pepper
  • While the baguette is warm, rub the peeled garlic clove over for a background flavour.

  • Spoon the tomato mixture onto the toasted baguette slices and drizzle with balsamic glaze if desired. Serve immediately.
    1 tbsp balsamic vinegar

Guacamole Bruschetta Instructions:

  • Preheat the oven to 200°C (400°F). Toast the baguette slices for 5 minutes until crisp.
    1 medium French baguette
  • In a bowl, mash the avocado and mix in lime juice, diced tomato, red onion, coriander, salt and pepper.
    1 large ripe avocado, 1 tbsp lime juice, 1 small tomato, 1 tbsp red onion, 1 tbsp fresh coriander, salt, pepper to taste
  • Spread the guacamole mixture onto the toasted baguette slices, drizzle with olive oil, and garnish with fresh parsley. Serve immediately.
