The cuisine of Peru is quite different from its neighbours. The cuisine is a unique mix of ancient Incan roots, Spanish foods, French methods and even Chinese immigrant dishes. It has the claim that the potato was first cultivated in Peru.  Corn and quinoa form a starch based foundation on many meals. Whilst ají pepper adds spice and colour to many recipes. Fish and seafood is abundant along the coast where ceviche is so very popular.
