Category - Mortadella

Mortadella is a large Italian sausage or salami. It is traditionally made of  ground meat-cured pork, including at least 15% small cubes of pork fat. It is traditionally flavoured with black pepper grains, but modern versions can also contain pistachios or, more rarely, myrtle berries. Recipes such as Mufaletta sandwiches use mortadella to great effect. The flavour can vary depending on which peppers and olives are included or not.
