Crayfish are the much smaller, freshwater relative of the lobster . The most common and easiest method to cook is to place the Crayfish into boiling salted water .  Bring them back up to the boil and as soon as they turn red, remove them and drop them into an bowl of iced water. This will stop them from overcooking. Recipes such as crayfish chowder,  bouillabaisse and Prawn and Crayfish Cocktail are very popular.
