  • Remove the scallops from the shells/packaging and dry them with kitchen paper.
  • Place them onto a chopping board and season wit salt and pepper.
  • Place a large frying pan over a medium high heat and add ½ of the unsalted butter.
  • When the butter has melted, add the scallops placing them apart. Do not move the pan or the scallops once they are in.
  • Reduce the heat to medium and add a little more butter if needed. You need to keep the pan buttered as it will help cook evenly and to be used to baste the scallops.
  • After about 3 minutes, one side of the scallops should be a lovely brown colour. Using tongs quickly turn them over.
  • Add the garlic and thyme to the pan and baste them all using the melted butter.
  • After about 2 minutes they will start to turn brown.
  • Gently remove the scallops from the pan using tongs or a slotted spoon and keep warm.
  • Add the butter to the pan and using a wooden spoon/spatula in a circular motion loosen/free any leftover bits from the scallops from the pan. They are full of flavour.
  • When the butter has melted, remove from the heat.
  • Place the scallops onto warmed serving dishes and spoon the butter in the pan over them.
  • Serve with a side of your choice (asparagus, green beans, chorizo etc) immediately.
