Prepare the Crostini:

  • Preheat the oven to 190°C (170°C fan).
  • Slice the baguette into 1cm thick rounds. Arrange the slices on a baking tray. Brush lightly with a little olive oil and season with a pinch of salt and pepper.
    1 large French baguette, salt, black pepper
  • Bake for 8 to 10 minutes until golden and crisp. Turn the slices halfway through cooking for even browning.

Cook the Mushrooms:

  • Heat the remaining olive oil in a large frying pan over medium-high heat.
    3 tbsp olive oil
  • Add the sliced mushrooms and cook for 6 to 8 minutes. Stir occasionally until they release their moisture and begin to brown.
    500 g chestnut mushrooms

Add the Garlic:

  • Reduce the heat slightly. Add the minced garlic and cook for 1 minute. Stir continuously to prevent the garlic from burning.

  • Season with salt and black pepper to taste.

Finish the Dish:

  • Remove the pan from the heat. Stir through the chopped parsley. If desired, add a small knob of butter for extra richness.
    2 tbsp fresh parsley, butter

Serve:

  • Arrange the warm crostini on a serving platter. Spoon the garlic mushrooms over the crostini just before serving, or serve the mushrooms in a bowl alongside the crostini so guests can help themselves.

Notes

 
My Tips:
Chestnut mushrooms provide a deeper flavour, but button mushrooms also work well.
Add a squeeze of lemon juice before serving for extra freshness.
A sprinkle of grated Parmesan can add a savoury finish.
Serve as a starter, light lunch, or party appetiser.
