Tomato Sauce

Homemade Tomato Sauce is a fundamental recipe that every cook should know. This recipe can be added to Quick MeatballsOriental Meatballs and a large number of pastas. This sauce will complete a meal and can be varied according to your tastes. However, I like to add a dash of Chilli Sauce or Tabasco Sauce for a hit of heat. My children grew up on pasta with Tomato Sauce and have learnt the recipe and my grandchildren are now enjoying the sauce. The obvious benefit is how few ingredients are involved and how quickly it can be produced. Also if you want to add a bit of body, I add smoked bacon to the pan and render the fat. This is used as the base for the sauce and adds flavour and texture. Furthermore, the sauce can be made in advance and frozen for a later date.

This Tomato Sauce is such a simple recipe that I make batches of it and freeze for another day. Goes so well with homemade meatballs and pasta (recipe also on this site).

  • Heat the olive oil in a pan over a medium heat.
    3 tbsp olive oil
  • Add the onion, mixed herbs and garlic and cook until soft, stirring occasionally.
    1 medium onion, 1 1/2 tbsp dried mixed herbs, 4 cloves garlic, ground black pepper
  • Add the tomatoes and bring it all to a boil.
    800 g chopped tomatoes
  • Once boiled, turn down to a simmer and allow to bubble gently for a further 15 until the sauce has thickened.

Notes

If you are freezing allow to cool first. Tip: If you put the sauce into zip lock freezer  bags and lay them flat, they take up a lot less space in the freezer.

It has a nice depth of flavour from the garlic and herbs, although I felt it needed a bit more seasoning, so I added some salt and a pinch of sugar.
