Homemade Sriracha is a lovely chilli sauce made up of vinegar, red jalapenos, garlic, sugar and salt. Surprisingly despite its fiery sounding name it is traditionally mild but you can increase the intensity if wanted. It is a sauce that everybody enjoys without blowing your socks off. Serve as a dip and a sauce. It is used is dishes such as Vietnamese Pho and Sriracha Chicken Wings. Even western dishes like Bacon and Sriracha Asparagus include it with the ingredients.
Homemade Sriracha
A superb real homemade Thai chilli sauce using a milder chilli which gives a lovely taste and a hit of heat with out a tongue melt.

Ingredients
- 2 tbsp dark brown sugar
- 1 clove garlic chopped
- 40 ml water
- 70 ml real cider vinegar
- 300 g red chillies
- 1 tbsp Salt
Instructions
- Chop the chillies roughly and put in a blender with the garlic, salt, sugar and water and blitz until a fine paste.
- Pour the mixture into a jar and place in your larder with the lidslightly loose for a few days. When yo see bubbles staring to form it measns the chicllies are fermenting with the salt and sugar.
- Add the vinegar and pour into a saucepan to simmer fro about 15 minutes until the sauce thickens. Once thicker, leave to cool and then blitz again with the blender.
- Pour the blitzed sauce through a sieve into a sterilised jar for storage.
- It will last in the fridge for about a month.
