Ingredients
- 1 spray cooking oil
- 100 g pudding rice dried
- 2 tbsp sweetener
- 650 ml almond milk unsweetened fortified
- 1 tsp vanilla extract
- 1 large lime juice
- 1 large lime rind finely grated
- 3 medium cardamom pods lightly crushed
- 2 medium mango ripe /peeled and thinly sliced
- 20 g desiccated coconut toasted unsweetened
Instructions
- Preheat oven to 150°C/gas 2. Lightly spray a medium-sized ovenproof pudding dish with low-calorie cooking spray.1 spray cooking oil
- Place the pudding rice into a sieve and rinse under cold running water. Drain and tip into the ovenproof dish.100 g pudding rice
- 2 tbsp sweetener, 650 ml almond milk, 1 tsp vanilla extract, 1 large lime, 3 medium cardamom pods
- Stir well and bake for a further 1 hr.
- Arrange the mango slices over the top, sprinkle with the desiccated coconut and pop back into the oven for 10 mins. Scatter over the lime zest and serve immediately.2 medium mango, 20 g desiccated coconut, 1 large lime
