Avocado Sandwiches may sound strange but they are absolutely gorgeous. Served with crispy bacon and tomatoes for a delightful snack. This recipe is enough to make 2 sandwiches so depending on how hungry you are. I like to serve these warm but they lovely served cold so can be made in advance. Ideal for lunchboxes and on the go.

Ingredients
- 1 large avocado ripe ,peel,pitted
- 1/4 cup mayonnaise 60 ml
- 4 rashers bacon fried crisp
- 2 large tomatoes sliced
- 1 tsp lemon juice 5 ml
- 4 slices bread white or whole wheat
- Salt
Instructions
- In a small bowl mash the avocado along with the mayonnaise, salt, pepper, lemon juice, and optional hot sauce.
- The mixture should still have lumps of avocado.
- Spread on 2 slices of bread and top with crisp bacon if desired.
- Top with the remaining bread.
Notes
