  • Place the self-raising flour and a pinch of salt into a large mixing bowl.
    200 g self-raising flour, 1 pinch salt
  • Crack the eggs into the bowl before adding the milk, vegetable oil and vanilla extract.
    2 large eggs, 300 ml milk, 1 tbsp vegetable oil, 1 tsp vanilla extract
  • Whisk everything together until you have a smooth batter with no lumps. Allow the batter to rest for 5 minutes while the frying pan heats.
  • Lightly grease a non-stick frying pan with a little oil and place it over a medium heat.
  • Pour a small ladle of batter into the centre of the pan. Tilt the pan gently if needed so the batter spreads into a neat circle.
  • Cook for about 2 minutes until bubbles begin to appear on the surface and the underside is golden.
  • Carefully flip the pancake and cook the second side for another 1–2 minutes.

  • Warm the chocolate sauce gently in a small saucepan or microwave until it pours easily.
  • Gentle roll two pancakes onto each serving plate.
  • Arrange the fresh raspberries over and around the pancakes.
