Grilled Chicken Breast with Mustard Sauce

There is something wonderfully satisfying about serving a perfectly cooked chicken breast when friends or family come for dinner. It is a familiar ingredient, yet with the right flavours and a little care, it can become the centrepiece of a truly impressive meal. My Grilled Chicken Breast with Mustard Sauce is exactly that sort of dish. It is simple enough for a relaxed evening, but it also looks and tastes special enough to serve when entertaining.

I love trying different ways of preparing chicken, particularly because it takes on so many different flavours. This time, I wanted something with a little more character, so I paired beautifully grilled chicken with a rich and delicious mustard sauce. The combination works surprisingly well. The mustard brings a gentle sharpness, while the sauce itself adds a creamy, savoury richness that makes every mouthful feel indulgent.

Getting the chicken cooked properly is, of course, important. Nobody wants a dry and overcooked chicken breast, especially when the rest of the meal has been prepared with care. I find that grilling gives the chicken a lovely surface while helping to keep the inside tender and juicy. The slight char from the grill also adds another layer of flavour, which works beautifully alongside the mustard sauce.

For me, the accompaniments are just as important as the chicken. I served this dish with fluffy rice and a selection of lightly steamed vegetables. The rice is ideal for soaking up some of that wonderful sauce, while the vegetables add colour, freshness and a little texture. As a result, the plate looks inviting without needing lots of complicated extras.

I particularly enjoy serving meals like this when entertaining because much of the preparation can be done before everyone sits down. That means I can spend more time enjoying the company rather than disappearing into the kitchen. Once the chicken is cooked and rested, everything can be brought together quite quickly. Then, with the sauce spooned over the top, it becomes a meal that looks far more complicated than it actually is.

The mustard sauce is definitely what makes this dish stand out. Mustard can sometimes be quite strong, but when it is balanced properly, it provides a wonderful depth of flavour without overwhelming the chicken. I like having enough sauce to drizzle over the chicken and rice, although I usually put a little extra on the table because someone always wants more.

There is also plenty of room to experiment with this dish. Different mustards can change the character of the sauce considerably. A traditional mustard gives a familiar savoury flavour, while a wholegrain version adds little bursts of texture. You can also adjust the richness depending on what you are serving alongside it. That is one of the reasons I enjoy cooking at home. A good basic idea can often be changed slightly depending on what is available in the cupboard or fridge.

The vegetables can be varied as well. Broccoli, carrots, green beans and peas all work particularly well, although I tend to use whatever looks freshest. I like keeping the vegetables lightly steamed so they retain some bite. This provides a pleasant contrast to the tender chicken, fluffy rice and smooth sauce.

Presentation is another reason I enjoy making this meal for guests. A neatly arranged chicken breast with rice and colourful vegetables already looks appealing. Once the golden mustard sauce is spooned over the chicken, the whole plate becomes even more inviting. It is the sort of dinner that encourages everyone to start eating before you have even finished explaining what is on the plate.

Most importantly, this is a dish that delivers on flavour. The grilled chicken provides a delicious savoury base, the mustard sauce adds richness and character, while the rice and vegetables complete the meal. Every element has a purpose, yet nothing feels overly complicated.

I would happily serve Grilled Chicken Breast with Mustard Sauce for a family dinner, but it is also one of those recipes I would keep in mind when having friends over. It feels special without being fussy, and that is often exactly what I want when entertaining. Good food should bring people together, and this is certainly a dish that gives everyone something delicious to talk about around the dinner table.

Serving Ingredients:

Instructions

  • Place the chicken breasts on a board and, if they are particularly thick, gently flatten the thicker parts so they cook evenly.
    4 large chicken breasts
  • Rub the chicken with the olive oil, then season with the thyme, garlic granules, paprika, salt and black pepper. Leave for around 10 minutes while the grill heats.
1 tbsp olive oil, 1 tsp dried thyme, 1 tsp garlic granules, ½ tsp paprika, salt, freshly ground black pepper
  • Cook the rice according to the packet instructions. Once cooked, drain if necessary, fluff with a fork and keep warm.
    250 g long-grain rice
  • Heat a grill or griddle pan to a medium-high temperature. Place the chicken breasts onto the hot grill and cook for approximately 6–8 minutes on each side, depending on their thickness.
  • Turn the chicken occasionally so it develops an attractive golden colour and light char without burning. The chicken should be completely cooked through, with the thickest part reaching 75°C.
  • Once cooked, transfer the chicken to a warm plate and loosely cover it with foil. Allow it to rest for around 5 minutes while the sauce is prepared.
  • Melt the butter in a saucepan over a medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
1 small onion, 1 tbsp butter
  • Add the garlic and cook for another minute, stirring regularly so it does not burn.
    2 cloves garlic
  • Pour in the chicken stock and bring the mixture to a gentle simmer. Allow it to reduce for several minutes so the flavour becomes more concentrated.
    250 ml chicken stock
  • Reduce the heat and stir in the double cream, Dijon mustard and wholegrain mustard. Add the honey and lemon juice, then stir everything together.
150 ml double cream, 2 tbsp Dijon mustard, 1 tbsp wholegrain mustard, 1 tsp honey, 1 tsp fresh lemon juice
  • Allow the sauce to simmer gently for 3–5 minutes until it thickens slightly. Avoid boiling it vigorously, as this can cause the cream to split.
  • Taste the sauce and season with salt and freshly ground black pepper. Add a little more mustard if you prefer a stronger flavour.
    salt, freshly ground black pepper
  • Meanwhile, steam the vegetables until tender but still slightly crisp. Try not to overcook them, as keeping some texture makes the finished dish much more enjoyable.
    300 g vegetables
  • Spoon the rice onto four warmed plates and arrange the steamed vegetables alongside it.
  • Place a grilled chicken breast on each plate and generously spoon the warm mustard sauce over the chicken.
  • Finish with a sprinkling of freshly chopped parsley and serve immediately.
    Fresh parsley

Notes

Serving:
This dish is particularly good with broccoli, green beans and carrots, although almost any fresh seasonal vegetables will work. The rice is excellent for absorbing the mustard sauce, but mashed potatoes or roasted potatoes would also make a delicious alternative.
For entertaining, prepare the sauce shortly before serving and keep it warm over a very low heat. Resting the chicken before plating also helps keep it juicy and tender.

A lovely combination of flavours and textures. I used chicken thighs instead of breasts because that was what I had available, and they worked really well.

Very impressed with this recipe. I was slightly unsure about the honey in the sauce, but it added a subtle sweetness that balanced the mustard perfectly.

Really tasty and very presentable. I reduced the amount of Dijon mustard slightly because my children prefer milder flavours, and it still tasted wonderful.
