There are some dishes that prove good food does not need a long list of ingredients. Grilled sardines are a perfect example. Fresh sardines, a hot grill and a little care are all you need to create a seafood dish that tastes wonderfully clean and natural.

One of the things I love about sardines is how quickly they cook. That makes them ideal for a summer barbecue when you want something lighter than burgers or sausages. They also work beautifully on a grill indoors when the weather is less cooperative. Either way, the important thing is to cook them over a good, hot heat.

The skin deserves plenty of attention. Sardines have naturally oily skin, which helps them develop a lovely crisp surface as they cook. That does not mean the dish has to be boring. Quite the opposite. When you keep the flavours simple, you can really appreciate the fish. You notice the smoky edges, the crisp skin and the rich, almost buttery flesh. Each bite has plenty going on without becoming heavy.

Grilled sardines also have a wonderfully Mediterranean feel. Put them on the table with crusty bread, a fresh salad and perhaps some grilled vegetables, and you have the makings of a relaxed meal. I particularly like serving them with tomatoes, cucumber and herbs because the freshness of the vegetables balances the richness of the sardines.

They are also surprisingly versatile. Serve them as a main course for a simple lunch, or make them part of a larger seafood spread. They can sit happily alongside prawns, grilled vegetables and salads at a barbecue. Because they cook so quickly, they are also useful when you want to serve something impressive without spending hours in the kitchen.

Of course, sardines are a fish that needs to be treated with a little respect. They are delicate, and excessive handling can cause problems once they are on the grill. A gentle touch and a properly heated cooking surface make a big difference. Once they are cooked, I like to serve them promptly while the skin is still crisp and the flesh is warm.

Prepare the sardines:

  • Rinse the cleaned sardines briefly under cold water, then pat them thoroughly dry with kitchen paper. Keeping the fish dry helps the skin crisp nicely during cooking.

Prepare the seasoning:

  • Place the sardines in a large bowl. Add the olive oil, garlic, oregano, salt and black pepper. Gently turn the sardines until they are evenly coated.
    2 tbsp extra virgin olive oil, 1 tsp dried oregano, 1 clove garlic, salt, freshly ground black pepper

Heat the grill:

  • Preheat your barbecue or grill until it is very hot. A clean, well-oiled cooking grate will help prevent the sardines from sticking.

Grill the sardines:

  • Place the sardines carefully onto the hot grill. Cook for approximately **3–4 minutes on each side**, depending on their size and the intensity of the heat.

Turn carefully:

  • Use a pair of tongs or a suitable fish turner to turn the sardines. They are delicate, so avoid moving them unnecessarily while they cook.

Check for doneness:

  • The skin should be crisp and lightly charred, while the flesh should be opaque and come away easily from the bone. Make sure the fish is thoroughly cooked before serving.

Finish the dish:

  • Transfer the grilled sardines to a serving platter. Scatter over the chopped parsley and serve immediately with plenty of fresh lemon wedges.

Suggestions on Serving:
Grilled sardines are best served simply. I like to put them in the middle of the table with **crusty bread, a fresh tomato and cucumber salad, and grilled vegetables**.

For a Mediterranean-style barbecue, serve them alongside grilled peppers, courgettes and tomatoes with a little extra virgin olive oil and lemon.
