Halloumi Summer Salad is a must for those summer meals. This beautiful vegetarian salad is a centre piece of the table with its colours, appearance and taste. The simply fried halloumi adds body and goes well with a chilli based sauce. I have tried romaine and gem lettuce but a mixed salad works best. Its many colour, shapes and flavours compliment the halloumi. Serve as a main dish or as a side dish, it fits in perfectly.
