  • In a large mixing bowl, combine the flour, yeast, salt, and sugar. Gradually add the warm water and mix until a dough forms.
    500 g all-purpose flour, 7 g active dry yeast, 1 tsp salt, 1 tbsp sugar, 350 ml warm water
  • Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
  • Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  • Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a long rope, about 50cm (20 inches) long, and shape it into a pretzel.
  • In a large pot, bring water to a boil and add the baking soda. Carefully place each pretzel into the boiling water for 30 seconds, then remove and place it onto the prepared baking sheet.

  • Sprinkle the pretzels with coarse salt and bake in the preheated oven for 10-12 minutes or until golden brown.
