Ingredients
- 1 ½ cups paella rice Bomba or Arborio
- 2 tbsp olive oil
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 1 large red bell pepper diced
- 1 large tomato grated or finely chopped
- 1 tsp smoked paprika
- 1 pinch saffron threads soaked in 2 tbsp warm water
- 4 cups chicken broth vegetable
- 200 g prawns cleaned and deveined
- 200 g mussels cleaned
- 1 large lemon juice and zest
- salt to taste
- pepper to taste
- 1/4 bunch fresh parsley chopped
- 1 large lemon sliced
Instructions
- Heat the olive oil in a large paella pan or wide skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. - Add the paella rice to the pan and stir to coat it with the oil and vegetables. Stir in the grated tomato, smoked paprika, and saffron (with its soaking water). - Pour in the chicken or vegetable broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to a simmer. Cook the rice for 15 minutes without stirring, letting it absorb the liquid.4 cups chicken broth
- After 15 minutes, scatter the prawns, mussels, and squid rings (if using) over the rice. Cover the pan with a lid or foil, and cook for another 10-12 minutes, until the seafood is cooked through and the mussels have opened.200 g prawns, 200 g mussels
- Once the seafood is done, drizzle the lemon juice over the paella and add the lemon zest. Let the paella rest for a couple of minutes before serving.1 large lemon

For a change, I had all of the ingredients so why not. This is an aromatic and refreshing dish which I will certainly be making again.
