Pistachio Nut Brownies were a favourite of my late mother and I used to make a batch for Mothers day and her birthday and in fact most weeks.. Everybody loves chocolate… Using pistachios in this recipe gives a lovely soft crunch. I serve these as cakes, a snack, a dessert and ideal for picnics. I cut the brownies into bite size gift boxes as a little treat.

  • Turn on the oven at 175C/350F/Gas Mark 4 and either lightly butter a 12×9 inch baking tray or line with greaseproof paper.
  • Place a large pan over a low heat and add the butter and chocolate. Constantly stir to avoid sticking and burning. When fully melted remove from the heat and put to one side to cool.
    10 oz dark chocolate, 20 oz unsalted butter
  • Add the sugars and whisk until everything is fully mixed.
    1 cup granulated sugar, 2 cups light brown sugar
  • Add the eggs one at a time and whisk. (one at a time makes it easier to whisk).
    6 large eggs
  • After the eggs have been added and whisked in, add the vanilla and salt and using a flexible spatula mix thoroughly.
    1 tbsp vanilla extract, ½ tsp salt
  • Sieve the flour and cocoa powder and add to the other ingredients. You need to gently fold the flour in until mixed well but not overdo it as you want the mixture to be lovely and airy.
    2 cups flour, ½ cup cocoa powder
  • Add the pistachio nuts and again mix gently.
    1 cup pistachios
  • Gently spoon/pour the mixture into the prepared baking tin.
  • Place in the oven and leave for 30 minutes. After 30 minutes, remove and gently shake the baking tin. If the brownies have a wobble, they are not quite cooked.
  • Gently return to the oven and bake for a further 5 minutes or until a lovely crust has formed on the top.
  • Remove from the oven and put to one side to cool.
  • Once cool, slice into portions and place in an airtight container to store.
