Ingredients
- 4 kg turkey crown
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tbsp rosemary chopped
- 1 tbsp thyme chopped
- 1 tsp lemon zest grated
- 1 tbsp sea salt
Instructions
- Preheat the oven to 170 C / Gas 3.
- 2 tbsp olive oil, 2 cloves garlic, 1 tbsp rosemary, 1 tbsp thyme, 1 tsp lemon zest, 1 tbsp sea salt
- Place the turkey crown in a roasting tin (on a rack if desired) and rub the herb mixture all over the crown, getting under the skin as well.4 kg turkey crown
- Roast the crown for 90 minutes to 2 hours, or until the juices run clear.
- Tent with aluminium foil and let rest for up to 2 hours before carving.
- It will stay warm for a long time so don’t panic.

I normally cook a full bird and it takes up a lot of room and hours to do right. This is so much easier.
