There are some lunches that never let you down. For me, the classic BLT sits right at the top of that list. I have made more Bacon, Lettuce and Tomato sandwiches than I can count. The texture becomes far more exciting. Each bite gives you that satisfying crackle before you reach the smoky bacon and sweet tomato underneath.
I started making this version on busy Saturdays. The children would dash in and out of the garden. My husband would hover in the kitchen hoping for something hearty. A standard sandwich felt too ordinary. So I popped the whole thing into the sandwich press. The result brought smiles all round.
The real magic lies in contrast. First, you need properly crisp bacon or however you like it. My grandchildren like it “not cremated” as hey put it. For me, I cook it until the edges curl and the fat turns deep golden. That crispness matters. Then I slice the tomatoes thick enough to stay juicy but not so thick that they slide out. A pinch of salt wakes them up beautifully.
Now, let us talk about the toast. Soft bread works, of course, but toasting transforms it. The outside becomes firm and buttery. The tangy, slightly sweet flavour pairs wonderfully with bacon. It cuts through the richness and lifts the whole sandwich. Spread it generously but not wildly. You want flavour in every bite without overpowering the other ingredients.
Lettuce often gets forgotten in hot sandwiches. Yet here it still has a role to play. I add it at the last moment so it keeps its crunch. That fresh, cool layer balances the warmth of the toast and bacon beautifully.
What I love most about this BLT Toastie is its simplicity. You do not need fancy ingredients. You do not need hours in the kitchen. Instead, you take something familiar and make it just a little more indulgent. This works for a quick lunch or for a relaxed supper with crisps on the side. It even works cut into triangles for a casual get-together with friends.

BLT Toastie
Equipment
- Frying Pan or grill
- Sandwich press toastie maker or frying pan
Ingredients
Main Ingredients:
- 4 slices white bread good quality or wholemeal bread
- 8 rashers streaky bacon
- 2 large ripe tomatoes sliced
- 2 handfuls iceberg lettuce or little gem
- 3 tbsp brown sauce
Larder Essentials:
- Butter for spreading
- Freshly ground black pepper
- 1 pinch salt for the tomatoes
Instructions
Cook the bacon:
- Heat a frying pan over medium heat. Lay the bacon rashers in a single layer. Cook until deeply golden and crisp on both sides. Turn them with tongs as needed. Transfer to kitchen paper to drain.8 rashers streaky bacon
Prepare the tomatoes and lettuce:
- Slice the tomatoes evenly. Sprinkle lightly with salt and a little black pepper if desired. Wash and dry the lettuce thoroughly. Crisp, dry leaves give the best texture.2 large ripe tomatoes, Freshly ground black pepper, 1 pinch salt, 2 handfuls iceberg lettuce
Butter the bread:
- Spread a thin layer of butter on one side of each slice of bread. This will form the outside of the toastie and help it turn golden.Butter
Assemble the toasties:
- Lay two slices of bread butter-side down. Spread a generous tablespoon of brown sauce on the unbuttered side. Add the crispy bacon evenly. Layer the tomato slices on top. Finish with lettuce. Place the remaining bread slices on top, butter-side facing outwards.3 tbsp brown sauce, 4 slices white bread
Toast until golden:
- Place the sandwiches into a preheated sandwich press and cook for 3–5 minutes until golden and crisp. If using a frying pan, cook over medium heat. Press down gently with a spatula. Cook for 2–3 minutes per side until the bread turns golden and crunchy.
Rest briefly and slice:
- Remove from heat and allow to rest for one minute. Slice in halves or triangles.
- Serve immediately while hot and crisp.
