First things first, let’s talk ingredients. You’ll need ripe tomatoes, onions, garlic, vegetable broth/stock, olive oil and a blend of herbs like basil, oregano, and thyme. Feel free to get creative with your herb selection – that’s where a lot of the magic happens!
Start by chopping up your onions and garlic, then sauté them in a bit of olive oil until they’re nice and fragrant. This step is crucial for building flavour, so don’t rush it.   • Add the chopped tomatoes to the pot.

  • You can use an immersion blender directly in the pot until smooth, or carefully transfer the soup to a blender in batches and blend until velvety smooth.
  • Taste the soup and adjust the seasoning as needed. Add more salt, pepper, or herbs to suit your taste preferences.
