  • In a mixing bowl add the dry ingredients and stir well to combine.
    2 ½ tsp paprika, 1 tsp salt, ½ tsp black pepper, 1 tsp poultry seasoning
  • Place the chicken strips onto a clean chopping board and generously sprinkle the mixed dry ingredients. Move the chicken around so all sides get coated.
    6 large chicken breasts
  • Place a large frying pan or griddle over a medium high heat and add the olive oil.
    1 tbsp olive oil
  • When hot, add the chicken pieces and sauté for about 5 minutes. Flip the chicken over and cook for a further 3 – 5 minutes until cooked through.
  • Squeeze the lemon juice over the chicken and serve.
    1 tbsp lemon juice
  • Any juices in the pan can be used to pour over the chicken when served.
  • Garnish with the chopped scallions/spring onions
    2 large scallions

Notes

I like to use poultry seasoning which is a pre made mixture of dried marjoram, nutmeg, thyme, rosemary and sage
