Cheeky Cheese and Tomato Pizza is as good as it sounds. This recipe is very simple even when making your own dough. I like to use two cheeses normally mozzarella and a cheddar grated and mixed together. Serve as a main dish but also as a snack, this is a favourite with my grandchildren. Also eaten cold in lunches and picnics means nothing gets wasted. The cheeky part of this pizza is the pepperoni hidden under the cheese, the name was chosen by my granddaughter Chloe. We have also added meatballs, olives sliced hotdogs under the cheese.

Making the Pizza Crust

  • In a large mixing bowl, add the flour, sugar, yeast, salt and 2/3rds of the flour. Stir to combine. Add the warm water and the oil and stir well to mix. Slowly add the last of the flour mixing as you go. You need a sticky shiny dough ball. (Ideal if you have a food mixer with a dough attachment.
    1/2 oz instant yeast, 80 ml Olive oil, 1 ½ tsp salt, 385 g flour, 785 ml water
  • Spread a little extra flour over a clean surface and a transfer the dough ball to it. Knead the dough by placing the ball of your hand in the middle of the dough and pushing away from you. Fold the dough back turn 90 degrees and repeat until the dough is lovely and smooth. Only takes about 4 – 5 minutes.
  • Read the instructions of the yeast packet as you may need to allow the dough rise before cooking.
  • Cut the dough in half. Lightly flour the surface again and gently push the dough into the shape of your pizza tray/pan.

Making the Sauce

  • In a mixing bowl, add the tomato paste, oregano, garlic powder, onion powder, sugar, salt, pepper and basil and mix thoroughly until fully combined with a smooth texture. If the mixture is too thick, then add a little water. You need a consistency that will stay on the pizza and not run off.
    12 oz tomato paste, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp sugar, ½ tsp salt, ½ tsp black pepper, 1 tsp oregano, 1 tsp basil

Assembly

  • Preheat your oven to 220C/425F/Gas Mark 7.
  • Lightly oil or cover with parchment paper two 12-inch pizza trays/pans.
  • Add the sauce to each of the pizza bases spreading it evenly leaving about an inch around the edge, the pickup zone.
  • Place the peperoni all over the pizza and then cover with the grated cheese.
    220 g pepperoni, 225 g cheese
  • Add to the oven for 10 minutes and swap the pizzas between the top and lower shelves to make sure they cook at the same rate.
  • Cook for a further 8 – 10 minutes until the crusts has browned and the cheese is bubbling away.
  • Slice whilst hot and serve.
