Uruguayan Potato Salad – Ensalada Rusa is lovely recipe that is delicate yet filling as a side dish. This recipe is different as Carrots and Peas are mixed with the potatoes for added flavour and texture. Also both Mayonnaise and Sour Cream are included in the recipe. This is not healthy but worth it.
Uruguayan Potato Salad – Ensalada Rusa
- Cook the potatoes, carrots, and peas separately in salted water until they are tender but still firm.
- Drain and combine with the remaining ingredients, tossing gently to combine well.
- Refrigerate covered for at least 2 hours or overnight.
