Prosciutto and Arugula Pizza is a rapid dinner when in a rush. The pizza dough is shop brought and the passata mix takes a minute to create. Who doesn’t like melted cheddar and mozzarella and a spicy tomato sauce? All together in the oven and hey presto a pizza dinner that’s healthier and quicker than a takeaway. Serve as a main dish with a dip for a quick meal. I heat the tray in the grill before assembling so the base of the dough gets a head start cooking and doesn’t go all soggy.

Prosciutto and Arugula Pizza
I lovely fresh pizza with the glorious mozzarella, cheddar, prosciutto and arugula not to forget the lovely mild chilli kick.

Ingredients
- 8 oz pizza dough
- 150 ml passata
- 1 medium red chilli deseed/slice
- ½ tsp dried mixed herbs
- 1 tbsp tomato puree paste
- 2 large round tomatoes sliced
- 12 slices prosciutto
- 2 oz mozzarella
- 2 oz cheddar
- 1 oz arugula rocket
- Olive Oil
- salt to taste
- pepper to taste
Instructions
- Turn on the grill to a medium heat. Place the baking tray under the grill to heat up.
- Spread the premade dough into a circle slightly smaller than the baking tray.8 oz pizza dough
- Remove the hot tray from the grill and add the pizza dough.
- Spread the passata mix on the dough leaving about ¾ inch gap around the edge. Add the tomato slices each with a small pinch of salt.2 large round tomatoes
- Then spread the grated cheddar and torn mozzarella over the pizza. Add the tray back under the grill and cook until the dough rises and browns and the cheese melt. Normally 10 – 12 minutes but your grill may vary.2 oz mozzarella, 2 oz cheddar
- Remove from the grill and add the prosciutto and arugula/rocket and a little drizzle of olive oil.12 slices prosciutto, 1 oz arugula, Olive Oil
- Serve straight away.
