My Kind of Brunch

My Kind of Brunch is a simple recipe that even I can do well. The waffles are home made, so much more tasty that shop brought and so easy to prepare. I like to add fresh fruit, depending on the time of year but frozen can be used when thawed. To avoid additional calories, I add low fat Greek yogurt but I will admit with a small squeeze of honey. This is a must for me with waffles as is binds the fruit and waffle into one perfect mouthful. Serve for breakfast /brunch for an amazing way to start the day.

  • Preheat your waffle maker/iron.
  • In a large mixing bowl add the baking powder, salt, all purpose flour and sugar and lightly whisk to combine.
    2 cups all purpose flour, 4 tsp baking powder, 1 tsp salt, 2 tbsp sugar
  • In a separate mixing bowl add the wet ingredients starting with the eggs which should be beaten. Then add the butter, vanilla and milk and stir together.
    2 large eggs, 1 ½ cups full fat milk, 1/3 cup unsalted butter, 1 tsp vanilla extract
  • Carefully add the wet ingredients into the dry ingredients and whisk/stir until completely blended into a smooth batter with no lumps.
  • When the waffle maker has reached temperature, lift the lid and spoon/ladle the batter onto the waffle plates.
  • Close the lid and cook the waffles until crispy with a golden-brown colour.
  • Remove from the waffle iron and add the yogurt, honey and a scattering of fruit.
    10 oz blueberries, 10 oz strawberries, honey, 4 tbsp low fat yogurt
  • Eat immediately.

Notes

I like to produce large waffles and this recipes produces about 2 but this will depend on the size of your waffle maker.
