Chocky Chip Muffins have to be one of the most popular muffin varieties around. The soft delicate muffin with the part melted, part solid chocolate chips hiding inside. Whenever I put these and other varieties out, these always go first. Understandably as they are so tasty and a perfect snack.

  • Pre heat the oven to 180C/350F/Gas Mark
  • Add the eggs, oil, milk and vanilla extract into a mixing bowl and stir to combine.
    2 large eggs, ½ cup milk, ¼ cup oil, 1 tsp vanilla extract
  • In a separate mixing bowl, add the flour, chocolate chip and caster sugar and stir to combine.
    1 cup sugar, 2 cup self raising flour, ½ cup chocolate chips
  • Slowly add the dry mixture to the wet mixture making sure you constantly stir to prevent dry patches in the mixture. Once all of the dry ingredients have been added, give it a final stir.
  • Place muffin cups into a muffin tray and add the mixture between all 12 cups.
  • Sprinkle the reserved chocolate chips over the top of the muffins and pop in the preheated oven for 20 to 25 minutes or until lovely and light brown.
  • Once cooked, remove from the tray and leave to stand on a wire rack to cool fully prior to eating. The chocolate stays very hot for some time so be careful.

Notes

Notes:
Note 1: you will need a few more than the ½ cup as I always sprinkle some over the top of the muffins.
Note 2: If you don’t have self raising flour then for every cup of self raising used in the recipe combine one cup of all purpose flour, ½ teaspoon salt, ¼ teaspoon baking powder/soda and 1 teaspoon of baking powder.
