I got bored with the usual salted and roasted peanuts with my drink and then I found Honey Sesame Cashews. These cashews are so easy to make, so tasty and with the different nuts the flavours are amazing. The butter and honey give a crispy coating with smoked paprika for that heat and a darker colour. That’s what makes these my favourite snacks. I make them in advance and make a batch with paprika, the next one with cayenne or chilli powder. The list of options is extensive.

  • Start by preheating your oven to 300F/150C/Gas Mark 2
  • Line a sided baking tray with parchment/greaseproof paper and put to one side for now.
  • Add the butter and honey into a microwavable bowl. Heat in the microwave until the butter has melted (each microwave is different, so timing is up to you). Once melted, remove from the oven and stir well to combine.
    1 tbsp unsalted butter, 2 tbsp honey
  • Add the smoked paprika to the butter and stir well.
    ½ tsp smoked paprika
  • Add the cashew into a large mixing bowl and pour over the butter/honey/paprika mix and toss well to coat the nuts.
    10 oz cashews
  • Transfer the cashews to the lined baking tray making sure they are in a single layer.
  • Place in the oven on the middle shelf and cook for 30 minutes.
  • After about 25 minutes, remove from the oven and sprinkle the nuts with the sesame seeds and return to the oven.
    3 ½ oz sesame seeds
  • When cooked, remove from the oven and sprinkle with the salt. (the honey will be hot so don’t touch.)
    ½ tsp salt
  • When the honey has cooled slightly, remove the nuts from the parchment/greaseproof paper using a form spatula and leave to fully cool before moving to a storage or serving jar. See Note.

Notes

At times, the nuts could do with a little extra salt so when your about to dish them out, havea quick taste test.
