    4 slices wholemeal bread
  • In a small bowl, mix the mayonnaise with freshly ground black pepper and lemon juice. Set aside.
    2 tbsp mayonnaise, ½ tsp freshly ground black pepper, 1 tsp lemon juice
  • Lay the toasted wholemeal bread on plates.
  • Place a handful of baby spinach on each slice of toast.

  • Arrange the thinly sliced avocado over the spinach. Season lightly with salt and freshly ground black pepper.

  • Layer the smoked salmon slices on top of the avocado.
    150 g smoked salmon
  • Finish by drizzling the pepper mayonnaise over the salmon. Add more freshly ground black pepper if desired.
  • Serve the dish immediately for the freshest flavour, optionally with a lemon wedge on the side for extra zest.
