Bacon and Egg Brunch
Ingredients
- 2 large baps fresh soft white rolls
- 4 rashers smoked bacon
- 2 large eggs free range
- 1 tbsp oil or butter for frying
- 2 tbsp flavoured mayonnaise e.g., garlic mayo, mustard mayo, or chipotle mayo
- 1 small red chilli finely sliced
- 10 g rocket leaves
- salt to taste
- black pepper to taste
Instructions
- Slice the red chilli thinly, and have the rocket leaves washed and ready to go.
- Heat a frying pan over medium heat and cook the bacon to your desired crispness, turning occasionally.4 rashers smoked bacon
- Once done, set aside on kitchen paper to drain excess oil.
- In the same pan, add a little oil or butter if needed. Crack the eggs in and fry until the whites are set but the yolks remain runny.1 tbsp oil, 2 large eggs
- Season lightly with salt and black pepper.salt, black pepper
- Lightly toast the inside of each bap for a bit of crunch.2 large baps
- Spread a generous layer of flavoured mayonnaise on the inside of each bap. Layer on the crispy bacon, followed by the fried egg.2 tbsp flavoured mayonnaise
- Scatter the sliced red chilli on top, then finish with a handful of fresh rocket.1 small red chilli, 10 g rocket leaves
