Mullet comes in two colours but they are unrelated members of the fish family. Red mullet is a light-pink fish with fine and delicately flavoured, white, textured flesh. There are a couple of different types of red mullet and both are part of the surprisingly named goat fish family. Mullet is ideal as an ingredient in chowders such as Cioppino, an Italian fish chowder. Also pan frying the Mullet in a little oil is a popular and clean way to cook.
