Pollock is a lovely firm meat that is high in protein but low in fats. It can often be used as a substitute for salmon due to its flavour and texture.  It tastes specially lovely when served simply with rice, greens and a subtle sauce. Sauces such as Bérnaise Sauce or Parsley Sauce are ideal.
