I discovered this recipe years ago and forgot all about it until my grandchildren came to visit. They were not adventurous in the food line so I thought I would surprise them. I added the puffed rice cereal (puffed wheat/sugar puffs/Rice Crispies) ingredients and it was an instant hit. They are now in their 20’s and still love my Crispy Chicken Bake. Serve as a main dish or in a sandwich.

Ingredients
- 1/2 cup flour
- 1/4 tsp ground black pepper
- 2 large eggs
- 2 tbsp water
- 1 cup puffed rice cereal crushed
- 1 cup Parmesan grated
- 1 sachet dry onion soup mix
- 6 large chicken breasts skinless and boneless – not frozen
- 1/4 cup unsalted butter melted
Instructions
- Preheat oven to 375°F. Coat a 13x9x2-inch baking pan with vegetable cooking spray.
- In a shallow dish combine flour and pepper.1/2 cup flour, 1/4 tsp ground black pepper
- Beat eggs and water in a small bowl.2 large eggs, 2 tbsp water
- Combine rice cereal, Parmesan cheese and onion soup mix in a bowl.1 cup puffed rice cereal, 1 cup Parmesan, 1 sachet dry onion soup mix
- Dredge chicken in flour mixture, followed by a dip in the eggs. Roll in cereal until evenly coated. Arrange in a single layer in prepared baking dish and drizzle with melted butter. Bake, uncovered, for 30 minutes or until done. Serve warm.6 large chicken breasts, 1/4 cup unsalted butter

A serious upgrade on chicken nuggets
The puffed rice cereal was a clever twist, and it gave a nice crunch without being too heavy.
