Crispy Chicken Bake

I discovered this recipe years ago and forgot all about it until my grandchildren came to visit. They were not adventurous in the food line so I thought I would surprise them. I added the puffed rice cereal (puffed wheat/sugar puffs/Rice Crispies) ingredients and it was an instant hit. They are now in their 20’s and still love my Crispy Chicken Bake. Serve as a main dish or in a sandwich.

  • Preheat oven to 375°F. Coat a 13x9x2-inch baking pan with vegetable cooking spray.
  • In a shallow dish combine flour and pepper.
    1/2 cup flour, 1/4 tsp ground black pepper
  • Beat eggs and water in a small bowl.
    2 large eggs, 2 tbsp water
  • Combine rice cereal, Parmesan cheese and onion soup mix in a bowl.
    1 cup puffed rice cereal, 1 cup Parmesan, 1 sachet dry onion soup mix
  • Dredge chicken in flour mixture, followed by a dip in the eggs. Roll in cereal until evenly coated. Arrange in a single layer in prepared baking dish and drizzle with melted butter. Bake, uncovered, for 30 minutes or until done. Serve warm.
    6 large chicken breasts, 1/4 cup unsalted butter

Notes

Puffed rice cereal makes a surprise appearance in this crunchy chicken dish.

I enjoyed the Crispy Chicken Bake, but I found the onion soup mix a bit overpowering for my taste. Next time, I might use half the sachet or try a different seasoning mix. That said, the texture was excellent — super crispy on the outside and tender on the inside.
