Homemade Breaded Scampi is a 20 minutes recipe that looks good and taste amazing. Served with a salad and/or chips as a main course. Alternatively with a sauce for a starter or finger food and snack. I use langoustine for this recipe however, large peeled prawns are suitable.

Ingredients
- 20 large langoustines cut in half in too big
- 1 cup plain flour
- 2 large eggs free range
- 1 pinch black pepper
- 1 pinch salt
- 2 cups breadcrumbs homemade are easy
- Vegetable oil for frying
Instructions
- Pour enough oil into a deep sided saucepan to cover the scampi.
- Place the saucepan over a high heat ready for the scampi.
- In a small bowl, beat the eggs together with a pinch of salt.
- In a second small bowl add the plain flour with the black pepper and stir to combine.
- Finally, in a third small bowl add the breadcrumbs. If you put them in lie, then it makes it far easier to move the scampi from one dish to another.
- Dip the scampi in to the beaten egg and salt, then into the flour and black pepper and then finally into the breadcrumbs making sure you shake off any excess after each stage.
- When they have all been coated, fry the in the oil until the are lovely and golden brown. This is normally between 1 and 2 minutes depending on how hot the oil is. You need to keep an eye on them.
- Once browned, use a slotted spoon to transfer them to a plate covered with 2 pieces of kitchen paper. This will drain any excess oil.
