  • Place a saucepan over a medium heat and add the olive oil. Once hot, add the garlic and fry until soft but not brown.
    3 cloves garlic
  • Add the minced ginger, dark soy sauce, runny honey and 1 tsp of pepper and stir well to combine.
    60 ml dark soy sauce, 235 ml honey, 1 inch ginger, salt, pepper
  • Adjust the temperature until it reaches a light simmer for about 5 minutes. Warning you should keep an eye on the pan as the honey can froth up easily.
  • Remove from the heat and put to one side for now.
  • This can be used to spoon over or as a dip for recipes such as fried chicken and spring rolls.
