No Hassle Burgers

No Hassle Burgers are my favourite. I used to live on fast food but was introduced to this recipe by my now wife and was converted. The preparation I often make in advance and just need to cook and assemble when ready. I like to add a little sliced chilli in the burger mixture for an extra hit. This recipe is flexible so if you want to add a new ingredient then it can handle it. Serve as main dish with all of the trimmings; one per person is always enough.

  • Place a frying pan over a medium heat and add the oil. When hot, add the onion and fry for about 5 minutes until turning golden brown and lovely and soft. Divide into equal portions and transfer to a plate.
    1 tbsp olive oil, 2 large onion
  • In the same pan, fry the bacon rendering the fat as you go until crispy. Remove from the heat and put to one side.
    8 rashers smoked back bacon
  • Add the mince, egg and dried herbs and mix together. Add a pinch of salt and pepper and then half of the fried onions. Divide the mixture into four equal burger patties.
    500 g beef mince, 1 tsp mixed herbs, 1 large egg
  • If you are barbecuing, then turn the gas on ready to heat the grill. If cooking on the hob, place a pan/griddle over a medium high heat ready.
  • Add the patties to the bbq or pan and cook for 5 minutes before turning over for another 5 minutes.
  • When you have flipped the burgers, add the remaining fried onions on top and then cover with the cheddar cheese with about 3 minutes to go. This will soften superbly.
    8 slices cheddar cheese
  • While everything if cooking, lay the buns out and add ½ tablespoon of dressing on the base then some lettuce, tomato, sliced pickles.
    4 large gherkins, 4 large white sesame rolls, 2 large beef tomatoes, 2 tbsp burger dressing, 6 leaves lettuce
  • The burger should be ready so place one burger/onion/cheese per bun on top of the pickles.
  • Finally top with the crispy bacon and then another ½ tablespoon of dressing.
  • Put the lid on and tuck in.
