  • Set your oven to 200°C (180°C fan) 400°F or Gas Mark 6.
  • Place the baguette slices on a baking tray.
    1 large baguette
  • Brush both sides with olive oil and season with a little salt.
    2 tbsp olive oil, salt
  • Bake for 10 minutes or until golden and crisp. Set aside to cool.
  • Place the cherry tomato halves on a separate baking tray, cut side up.
    12 medium cherry tomatoes
  • Drizzle lightly with olive oil, and season with salt and pepper.
  • Roast in the oven for about 10-12 minutes, until softened and slightly caramelised. Allow to cool slightly.
  • In a small bowl, mix the prepared horseradish with the chopped chives.
    2 tbsp prepared horseradish, 2 tbsp fresh chives
  • Adjust seasoning with salt and pepper if needed.

  • Spread a small amount of the horseradish chive mixture on each crostini.
  • Top with a slice of roast beef, folding it neatly if necessary.
  • Place a roasted cherry tomato half on top of each.
  • If desired, garnish with a small sprig of fresh chives for an elegant finish.
  • Serve immediately, or keep at room temperature until ready to serve.

I will add the recipe I use to roast beef tomorrow. It always turns out moist and flavour full.
