Seafood with Saffron Rice is a meal I love. It’s vibrant colour, delicate seafood and filling saffron rice makes it a main dish that perfect for on your own or with guests. Its ready within 50 minutes and looks and tastes as if a chef had cooked it. I use salmon, prawns, squid and scallops and my local shop sells them in a pack. However, choose what ever seafood you enjoy, you may need to adjust the cooking time. Serve with a light salad.

Ingredients
- 100 g prawns frozen
- 100 g squid frozen
- 100 g salmon frozen
- 100 g scallops frozen
- 2 cloves garlic peel/sliced
- 1 large onion peel/chop
- 1 large red bell pepper cored/sliced
- 1 large yellow bell pepper cored/sliced
- 100 g peas frozen
- ½ pinch saffron
- 175 g rice white
- 700 ml vegetable stock broth or chicken
- 1 tbsp olive oil
- 1/2 bunch parsley chopped
- salt to taste
- ground pepper to taste
- 1 medium lemon juice only
Instructions
- Place a large saucepan over a medium high heat and add the olive oil.1 tbsp olive oil
- Once hot, add the onion and fry until soften but no coloured.1 large onion
- Add the bell peppers and garlic and fry for a further 3 minutes before adding the rice.
- Stir the rice well to coat with the garlic and onion flavours and the oil.175 g rice
- 700 ml vegetable stock, ½ pinch saffron
- Reduce the heat to a simmer and cook for about 20 minutes until the rice is lovely and tender.
- Add the seafood and frozen peas together with a squeeze of lemon and cook for a further 10 minutes or until the seafood is cooked and everything is piping hot.100 g prawns, 100 g squid, 100 g salmon, 100 g scallops, 100 g peas, salt, ground pepper
- Serve in pre warmed dishes with a sprinkle of chopped parsley as garnish.1/2 bunch parsley, 1 medium lemon
