The arrival of strawberry season always encourages me to create lighter desserts. During the warmer months, I often look for treats that taste fresh and look inviting. Therefore, Strawberries and Cream has become one of my favourite choices when friends and family gather around the table.

At first glance, this dessert appears beautifully simple. However, its charm comes from the combination of bright fruit, sweet jelly, and rich cream. Fresh strawberries provide plenty of flavour, while strawberry jelly adds colour and a refreshing texture. Together, they create a dessert that feels both nostalgic and elegant.

When I prepare this dish, I start by cutting the strawberries into halves. Occasionally, larger berries need quartering to create bite-sized pieces. As a result, every spoonful offers a balanced mix of fruit and jelly. Once I arrange the strawberries in individual jars, I pour over the prepared jelly and place everything in the fridge. After that, patience becomes the main ingredient while the dessert chills and develops its texture.

One reason I enjoy serving this dessert is its flexibility. Although I prefer small mason jars, almost any individual glass container works perfectly. Furthermore, the jars make serving effortless during parties and family meals. Guests can simply pick up a jar and start enjoying their dessert without waiting for portions. Consequently, hosting feels much more relaxed.

The finishing touches make a noticeable difference. First, I add a generous dollop of cream to each jar. Next, I place a few fresh strawberries on top for extra colour and flavour. Finally, I tuck in a small sprig of fresh mint. These simple additions transform a humble dessert into something that looks worthy of a special occasion.

Moreover, this dessert suits many different gatherings. For example, it works wonderfully after a barbecue, alongside an afternoon tea, or as a refreshing finish to a summer lunch. Because the dessert stays chilled, it feels especially welcome on hot days. Meanwhile, the combination of fruit and cream satisfies a sweet craving without feeling overly heavy.

Texture also plays an important role. The strawberries provide a juicy bite, while the jelly adds smoothness and structure. At the same time, the cream contributes richness that balances the fruity sweetness. Therefore, every layer brings something different to the experience.

This simple Strawberries and Cream dessert combines fresh strawberries suspended in sweet strawberry jelly with a topping of rich cream.   • Wash the strawberries thoroughly and pat them dry.
    500 g fresh strawberries
  • Remove the green tops from the strawberries.
  • Halve the strawberries. If any are particularly large, cut them into quarters.
  • Divide the prepared strawberries evenly between four small mason jars.
  • Place the strawberry jelly into a heatproof jug or bowl.
    135 g strawberry jelly
  • Pour the boiling water over the jelly crystals.
    500 ml boiling water
  • Stir continuously until the jelly has completely dissolved.
  • Allow the jelly mixture to cool for 10 to 15 minutes. Do not let it begin setting.
  • Carefully pour the cooled jelly into the jars, covering the strawberries.
  • Transfer the jars to the refrigerator.
  • Chill for at least 4 hours, or until the jelly is fully set.
  • Keep the jars refrigerated until ready to serve.
  • Just before serving, spoon a generous dollop of double cream onto each dessert.
    300 ml double cream
  • Garnish with two fresh strawberries and a small sprig of mint.
    4 sprigs fresh mint, 8 fresh strawberries
  • Serve immediately and enjoy.

Notes

 
Tips:
Use ripe, sweet strawberries for the best flavour.
Allow the jelly to cool slightly before pouring to prevent the fruit from floating excessively.
Clear glass jars showcase the strawberries beautifully.
For extra richness, lightly whip the cream before serving.
These desserts can be prepared a day in advance.
Small dessert glasses or ramekins work just as well as mason jars.
