At first glance, this dessert appears beautifully simple. However, its charm comes from the combination of bright fruit, sweet jelly, and rich cream. Fresh strawberries provide plenty of flavour, while strawberry jelly adds colour and a refreshing texture. Together, they create a dessert that feels both nostalgic and elegant.
When I prepare this dish, I start by cutting the strawberries into halves. Occasionally, larger berries need quartering to create bite-sized pieces. As a result, every spoonful offers a balanced mix of fruit and jelly. Once I arrange the strawberries in individual jars, I pour over the prepared jelly and place everything in the fridge. Strawberries and Cream
Equipment
- 4 500 ml mason jars individual or dessert jars
Ingredients
- 500 g fresh strawberries
- 135 g strawberry jelly
- 500 ml boiling water
- 300 ml double cream
- 4 sprigs fresh mint small
- 8 fresh strawberries for garnish
Instructions
- Wash the strawberries thoroughly and pat them dry.500 g fresh strawberries
- Remove the green tops from the strawberries.
- Halve the strawberries. If any are particularly large, cut them into quarters.
- Divide the prepared strawberries evenly between four small mason jars.
- Place the strawberry jelly into a heatproof jug or bowl.135 g strawberry jelly
- Pour the boiling water over the jelly crystals.500 ml boiling water
- Stir continuously until the jelly has completely dissolved.
- Allow the jelly mixture to cool for 10 to 15 minutes. Do not let it begin setting.
- Carefully pour the cooled jelly into the jars, covering the strawberries.
- Transfer the jars to the refrigerator.
- Chill for at least 4 hours, or until the jelly is fully set.
- Keep the jars refrigerated until ready to serve.
- Just before serving, spoon a generous dollop of double cream onto each dessert.300 ml double cream
- Garnish with two fresh strawberries and a small sprig of mint.4 sprigs fresh mint, 8 fresh strawberries
- Serve immediately and enjoy.
