Tomato Bread Soup – Pappa al pomodoro is a thick Tuscan soup. The soup consists of fresh tomatoes, bread, olive oil, garlic, basil and chicken stock. Using bread makes the soup extra filling and ideal for days out in the cold.

Ingredients
- 1 1/2 lbs tomatoes coarsely chopped, 450-675 g
- 3 cups bread 500-750 ml, 2 cm, cubed
- 4 cloves garlic crushed
- 3 tbsp Extra Virgin olive oil 45 ml
- 6 cups chicken stock 1-1.5 L
- 15 leaves basil shredded
- Salt
Instructions
- Heat the oil in a large pot over moderate heat and saute the garlic until it is lightly browned.
- Remove and discard the garlic.
- Add the stock, tomatoes, basil, salt, and pepper and bring to a boil.
- Add the bread, reduce the heat, and simmer for 10 minutes.
- Remove from the heat and let sit for 20 minutes before serving.
