Virgin Mojito is a lovely alcohol free version of the refreshing Cuban drink for everybody. The lack of alcohol means even the children can enjoy the coolness of this cocktails heritage. Obviously for the adult version you can add Rum or visit Mojito Time recipe for the full works. The mint gives a lovely base flavour that is so cooling on a hot day.

Ingredients
- 1 ltr soda water chill
- 20 g mint fresh, save a few leaves for serving
- 3 tbsp caster sugar golden is best
- 150 ml lime juice fresh
- 3 large limes cut into wedges to serve
- 15 – 18 regular ice cubes
Instructions
- Remove the mint leaves from the stem and drop into a large serving jug. It must be able to hold about 1.25 litres.
- Add the granulated sugar to the jug and pour in the lime juice.
- Using a long wooden spoon, bash the mint leasves and stir to dissolve the sugar in the lime juice.
- Add the ice.
- Add the soda water and gently stir to make sure everything is mixed.
- Now for the good part, taste it. If it needs to be sweeter, add a little more sugar and retest.
- Use the lime wedges to serve with th glasses or added to the jug.
- Enjoy this refreshing drink.
