Brunch Eggs

Brunch has a special sort of magic about it, especially in our house. It’s that cosy middle ground between breakfast and lunch where you can sit back, slow down and enjoy something indulgent. In my kitchen, brunch is when creativity meets comfort. Nothing embodies that spirit better than my trio of “Brunch Eggs.” Three simple ideas, three very different personalities, yet all equally effortless and satisfying. Brunch eggs are the kind of dishes that feel dressed up without demanding too much of your time or energy. Isn’t that the way brunch should be.

The first of the three Brunch Eggs is the picture of calm simplicity: a perfectly poached egg perched atop sliced avocado and wholemeal toast. There’s a thin swipe of mayonnaise on the toast, just enough to bring a gentle tang and extra creaminess. It doesn’t however overwhelm the other flavours. The avocado lays down that buttery, mellow foundation that pairs so well with eggs in any form. In my opinion though especially with a poached egg that gives way to a slow, golden pour of yolk.

It’s a dish that feels wholesome and modern, the sort of thing you can happily tuck into with a cup of coffee while looking out of a kitchen window on a quiet weekend morning. A sprinkle of sliced chives brings brightness and a fresh lift, while a scattering of herbs over the plate ties everything together in a way that looks natural but thoughtfully put together. It’s healthy, comforting and it’s the type of brunch you start your day with feeling a little more balanced.

The second Brunch Eggs option is for those who love a bit of old-fashioned heartiness — the open Bacon and Egg Sandwich. It’s the kind of brunch dish that feels like coming home, especially if you’ve grown up with weekend fry-ups or breakfast sandwiches as a family staple. Thick rashers of bacon, cooked however you like them — crisp, chewy, or somewhere in between — are laid out over toast that’s been lightly brushed with mustard. The mustard adds a subtle warmth and depth, just enough to cut through the richness of the bacon. On top of all that goes a runny fried egg, the yolk waiting to spill into all the corners and edges of the toast below. A scattering of sliced chives works its magic here too, adding that fresh herbal note that prevents the dish from feeling too heavy.

Again, a sprinkle of herbs makes everything feel a touch more polished, without taking away from its rustic charm. It’s hearty, satisfying, and perfect for anyone who prefers a brunch with a little more backbone.

Then there’s the third Brunch Eggs member of the trio — perhaps the most eye-catching of the lot. Picture white toast as a soft, blank canvas, with a layer of cream cheese for a smooth slightly tangy base. A poached egg sits proudly on top, delicate but ready to deliver that signature yolk moment. Wrapped around it is a ribbon of smoked salmon, giving the dish a sense of occasion without any real effort. The salmon’s saltiness meets the richness of the egg beautifully, and the cream cheese anchors everything with its cool softness. But the real surprise comes with the sliced strawberries. They add a pop of colour and a gentle sweetness. They balance the savoury elements in a way that’s unexpectedly delightful. Once again, a scattering of herbs brings fragrance, freshness, and a touch of green that makes the dish truly shine.

What I love about these three Brunch Eggs is how they offer something for everyone. The avocado version brings a modern, nourishing feel; the bacon and egg provides that nostalgic, comforting touch; and the salmon and strawberry toast adds elegance with a playful twist. All three brunch eggs share the same foundation of simple ingredients, easy assembly, and reliable results. It’s exactly what you want when cooking for family or friends on a slow weekend. Brunch eggs are versatile enough for a casual brunch for two or a small gathering. Either way everyone can choose their own favourite.

But the real beauty of these dishes lies in their effortlessness. There’s no complex technique or long list of instructions, just honest ingredients paired thoughtfully and plated with care. They show how small touches — a swipe of mayonnaise, a flicker of mustard, a ribbon of smoked salmon, a handful of fresh herbs — can transform everyday items like eggs and toast into plates that feel special. So the next time you’re planning a relaxed brunch at home, give these Brunch Eggs a try. Brunch Eggs are simple, they’re delicious, and they turn an ordinary late morning into something worth savouring.

Best All-Round Herbs for Brunch Eggs:
Chives – Light, oniony, and perfect with eggs. You’re already using them, and they work beautifully on all three dishes.
Parsley (flat-leaf) – Fresh, clean, and mild. Great for scattering over all plates without dominating any flavours.
Perfect Matches for Each Dish:
1. Poached Egg, Avocado and Wholemeal Toast
  • Chives (already included)
  • Coriander – Especially good if you want a slightly brighter, more aromatic twist.
  • Basil (small torn pieces) – Works well with the creamy avocado and mayonnaise.
2. Open Bacon and Egg Sandwich
  • Parsley – Adds freshness that cuts through the richness of bacon.
  • Chives – Complements the runny egg perfectly.
  • Thyme (very small pinch of leaves) – Adds depth without overpowering the dish.
3. Cream Cheese, Poached Egg, Smoked Salmon and Strawberries
