Perfect Pineapple Rice

I first thought Perfect Pineapple Rice would be a fairly ordinary rice dish with a little fruit added for sweetness, but it turned out to be colourful, filling and packed with lovely flavours and ideal as a main dish or as a side dish for a larger meal.

The five main ingredients are rice, pineapple, scrambled eggs, scallions, sweetcorn and red bell peppers. Yes, I know that sounds like six ingredients! However, for Five Ingredients Friday, I count the pineapple as part of the rice flavour rather than treating it as a separate main ingredient. It is the combination that makes this dish work so well.

What I particularly enjoy is the contrast between the ingredients. The pineapple brings a gentle sweetness, while the scrambled eggs add softness and richness. Then you have the sweetcorn, which gives little bursts of sweetness throughout the dish. Finally, the red bell pepper and scallions bring colour, freshness and a little crunch.

I am always amazed at how much colour a few simple ingredients can bring to a pan. The red pepper stands out beautifully against the golden rice, yellow sweetcorn and green scallions. Add the pieces of pineapple and suddenly you have a dish that looks far more complicated than it really is.

The rice itself is perfectly flavoured. The pineapple adds a fruity note without making the dish taste like dessert, which was one of the things I was slightly worried about when I first tried it. Instead, it gives the rice a subtle sweetness that works surprisingly well with the savoury ingredients.

I think this is where the scrambled egg makes such a difference. Rather than having large pieces of egg sitting on top, I like to break it into smaller pieces so that it becomes part of the rice. Every forkful then gets a little egg, some vegetables and a piece of pineapple.

Another thing I love about this recipe is how adaptable it feels. You can make it as a main meal, serve it as a side dish or use it as a way of turning leftover cooked rice into something completely different. In fact, using chilled leftover rice can make this an especially convenient recipe for a busy evening.

There is also something rather satisfying about cooking everything in one pan. Once the ingredients start coming together, the kitchen fills with lovely aromas and the colours become even more inviting. I find myself tasting as I go, which is probably not the best habit for someone trying to serve dinner!

The red bell pepper is worth cutting into fairly small pieces. That way, it cooks quickly and mixes nicely through the rice. I also like to slice the scallions finely because they add a fresh onion flavour without overpowering the pineapple.

Sweetcorn might sound like an unusual partner for pineapple, but it really works. Both ingredients have a natural sweetness, yet they have completely different textures. The sweetcorn gives the dish a little bite, while the pineapple is softer and juicier.

This is also a recipe where I would encourage a little experimentation. As an amateur cook, I enjoy recipes that give me enough structure to get started but still leave room to make small changes. Perhaps you prefer more pineapple, extra scallions or a little more scrambled egg. There is no reason why you cannot adjust the balance to suit your taste.

For me, the best recipes are not always the complicated ones. Sometimes a handful of ingredients, a hot pan and a little enthusiasm are enough to create something genuinely delicious. Perfect Pineapple Rice certainly falls into that category.

It is colourful, cheerful and surprisingly satisfying. More importantly, it proves that a simple rice dish does not have to be boring. The sweetness of pineapple, the richness of egg and the fresh crunch of the vegetables come together beautifully.

So, if you have some cooked rice waiting in the fridge and fancy trying something a little different, give this one a go. It is easy enough for an amateur cook, yet interesting enough to make you feel that you have discovered something new. And that, for me, is exactly what Five Ingredients Friday is all about.

Prepare the ingredients:

  • If using leftover rice, break up any large clumps with your fingers or a fork. Dice the red bell pepper and pineapple into small pieces, then slice the scallions finely.
    300 g long-grain rice

Scramble the eggs:

  • Crack the eggs into a small bowl and beat them lightly with a fork. Heat half of the vegetable oil in a large frying pan or wok over a medium-high heat. Add the eggs and gently stir until they are just cooked but still soft. Remove them from the pan and set aside.
    2 large eggs, 1½ tbsp vegetable oil

Cook the vegetables:

  • Add the remaining oil to the pan. Add the diced red bell pepper and cook for 2–3 minutes until it begins to soften. Add the sweetcorn and cook for another minute.

Add the pineapple:

  • Stir the pineapple into the vegetables. Cook for 1–2 minutes so that it warms through and begins to release some of its lovely sweet flavour.
    150 g pineapple pieces

Add the rice:

  • Add the cooked rice to the pan. Increase the heat slightly and stir everything together, breaking up any remaining clumps. Cook for 3–4 minutes, stirring regularly.

Flavour the rice:

  • Add the soy sauce, garlic powder and ground ginger. Season lightly with salt and black pepper. Stir thoroughly so the seasoning coats the rice and vegetables.
    1 tbsp light soy sauce, ½ tsp garlic powder, ½ tsp ground ginger, salt, black pepper

Return the egg:

  • Add the scrambled egg back into the pan. Break it into smaller pieces with your spatula and gently mix it through the rice.

Finish with scallions:

  • Stir most of the sliced scallions through the rice, reserving a small handful for serving. Cook for another minute, then remove from the heat.

Serve:

  • Spoon the Perfect Pineapple Rice into bowls or onto plates. Scatter the remaining scallions over the top and serve immediately.

Notes

Cook’s Tips:
Use cold rice where possible. Chilled leftover rice tends to fry much better than freshly cooked rice because it is drier and less likely to become sticky.
Don’t overcrowd the pan. A large frying pan or wok gives the rice plenty of room to cook properly. If your pan is small, cook the recipe in batches.
Keep the pineapple pieces fairly small. This helps distribute the sweet flavour throughout the dish without allowing one large piece to dominate a mouthful.
Don’t overcook the eggs. Removing them while they are still soft keeps the finished dish more enjoyable. They will warm through again when you return them to the pan.
Adjust the seasoning to taste. The soy sauce provides salt and savouriness, while the pineapple brings sweetness. Taste the rice before adding any extra salt.
Serving:
Perfect Pineapple Rice works beautifully as a meal on its own, but it can also be served alongside grilled chicken, prawns or other Asian-inspired dishes. For a simple Five Ingredients Friday dinner, however, I am more than happy to pile it into a bowl and enjoy it exactly as it is.
Storage:
Allow any leftovers to cool quickly and refrigerate them in a covered container. Use within 1 day and reheat thoroughly until piping hot. Avoid repeatedly reheating cooked rice.
