Beef and Tomato Rice

There is something wonderfully comforting about coming home after a long, tiring day and knowing that a proper, filling meal is waiting for you. For me, Beef and Tomato Rice is just the sort of dish that makes an ordinary evening feel a little more special. It brings together tender chunks of slow-cooked beef, beautifully flavoured tomato rice and a gentle kick of chilli to create a meal that is full of warmth and character.

What I particularly love about this dish is the way the flavours come together. The beef becomes wonderfully tender during slow cooking, while the tomatoes give the rice a rich, savoury flavour. Every mouthful brings a little of everything, from the soft, juicy beef to the comforting rice and the occasional hint of heat from the sliced chillies.

A Lovely Combination of Simple Ingredients

Tomatoes are the real star of this dish. As they cook, they develop a deeper flavour that works beautifully with the beef. Rather than simply serving the meat alongside plain rice, the tomato-infused rice brings everything together in one satisfying dish. It soaks up all those lovely flavours, making it every bit as enjoyable as the beef itself.

The slow-cooked beef is equally important. I prefer generous chunks that hold their shape but become tender enough to cut easily with a fork. There is no need for an expensive cut of meat here, either. A suitable cut of braising beef works very well because the longer cooking time allows it to soften and develop plenty of flavour.

Then there are the chillies. They add a little warmth and bring another layer of flavour to the dish. You can adjust the amount to suit your own taste, whether you prefer a gentle background heat or something with a little more bite. Personally, I think that touch of spice works wonderfully against the sweetness of the tomatoes.

A Filling Meal After a Busy Day

One of the best things about Beef and Tomato Rice is how satisfying it feels without needing lots of different side dishes. The beef provides a hearty centrepiece, while the rice makes the meal wonderfully filling. Consequently, it is ideal for those evenings when you want something substantial without having to prepare a table full of extras.

Although the cooking takes time, much of that time allows the flavours to develop naturally. I always think slow cooking is worth the wait, especially when the kitchen begins to fill with the smell of beef, tomatoes and herbs. It is the sort of aroma that makes you look forward to dinner long before it reaches the table.

You can also make this dish your own. A little extra chilli will appeal to those who enjoy spicy food, while fresh herbs add a lovely finishing touch. Parsley or coriander would work particularly well, depending on the flavour you prefer.

Making the Dish Look as Good as It Tastes

Presentation need not be complicated to make a meal feel special. I love the idea of serving the tomato rice with the tender beef arranged generously throughout, then finishing the dish with an open tomato placed on top. A scattering of freshly chopped herbs adds colour and freshness, making the whole plate look inviting.

That final touch of tomato also reinforces the flavours running through the rice. It is a simple detail, but it helps turn a comforting home-cooked meal into something that looks as though you have put a little extra effort into it.

A Recipe Worth Coming Back To

For me, Beef and Tomato Rice is all about honest, satisfying home cooking. It uses familiar ingredients, brings together flavours that work beautifully and produces a meal that feels genuinely comforting. There is nothing fussy about it, and that is part of its appeal.

Whether you are feeding the family on a chilly evening or simply want a hearty dinner after a hard day’s work, this dish is a lovely choice. Serve it straight from the pan, add those finishing herbs and enjoy every mouthful. It is the sort of warming meal that reminds you just how good simple home cooking can be.

Instructions

Brown the beef:

  • Pat the beef chunks dry with kitchen paper and season them with salt and black pepper.
600 g braising beef, salt, freshly ground black pepper
  • Heat the olive oil in a large, heavy-based casserole dish over a medium-high heat. Add the beef in batches and brown on all sides. Avoid overcrowding the pan, as the meat will steam rather than brown.
    2 tbsp olive oil
  • Remove the browned beef and set it aside.

Prepare the tomato base:

  • Reduce the heat to medium and add the chopped onion to the same pan. Cook for 5–7 minutes until softened, stirring occasionally.
    1 large onion
  • Add the garlic and sliced chillies, then cook for another minute. Stir in the tomato purée, smoked paprika, cumin and oregano. Allow everything to cook for a further minute to release the flavours.
2 tbsp tomato purée, 2 medium red chillies, 1 tsp smoked paprika, 1 tsp dried oregano, 1 tsp ground cumin, 3 cloves garlic
  • Add the chopped tomatoes and stir well, scraping any browned pieces from the bottom of the pan.
    400 g chopped tomatoes

Slow cook the beef:

  • Return the browned beef to the casserole dish and pour in the beef stock. Stir everything together and bring the mixture to a gentle simmer.
    750 ml beef stock
  • Cover with a lid and reduce the heat to low. Cook gently for approximately 2–2½ hours, or until the beef is becoming tender.
  • Check occasionally and stir to prevent anything sticking. Add a little extra hot water if the liquid reduces too much before the beef is ready.

Add the rice:

  • Once the beef is tender, stir in the rice. Dice one of the fresh tomatoes and add it to the pan.
    300 g long-grain rice
  • Check the amount of liquid. You need enough to cook the rice without leaving the finished dish too wet. Add a little hot water or stock if necessary, bearing in mind that the rice will absorb liquid as it cooks.
  • Bring the mixture back to a gentle simmer, cover and cook for approximately 15–20 minutes, or until the rice is tender. Cooking time will depend on the type of rice used.
  • Avoid stirring too often while the rice cooks, as this can make it sticky and break up the beef.

Prepare the tomato garnish:

  • While the rice finishes cooking, prepare the remaining tomato. Cut it into quarters, leaving the base attached if possible, then gently open it out to create a flower-like shape.
    2 large tomatoes
  • This simple garnish gives the dish a lovely finish and adds a fresh tomato element to the presentation.

Finish and serve:

  • Once the rice is cooked, remove the casserole from the heat and leave it covered for 5 minutes.
  • Fluff the rice gently with a fork, taking care not to break up the tender beef chunks. Taste and adjust the seasoning if needed.
  • Spoon the tomato rice and beef into a large serving dish or individual bowls. Place the opened tomato on top and finish with a sprinkling of freshly chopped parsley or coriander.
    2 tbsp parsley
  • Serve hot and enjoy!

Notes

Recipe Tips:
Choose the right beef: Braising steak or chuck steak works particularly well because slow cooking makes it tender and flavourful.
Adjust the chilli: Use one chilli for a milder flavour or two for more heat. Remove the seeds if you prefer a gentler result.
Keep an eye on the liquid: Rice absorbs liquid quickly, so check the pan before adding it. The aim is moist, flavourful rice rather than a watery stew.
Make it ahead: You can slow-cook the beef in the tomato sauce in advance, then reheat it thoroughly and add freshly cooked rice for serving.
Add extra vegetables: Diced red pepper or finely chopped carrots can be added with the onion for extra flavour and texture.
